Contest: Let's talk about Rice

Hello chefs.

How was your cooking today?

Thank you SIC for bringing such an excellent contest to the community. I really love the title of this contest. Because in India we consume it daily and sometimes this will be our full day meal also. In that way, I am more relatable to this topic, Why I am saying this because I used to cultivate rice on our farming land. So I am very happy to share my experience about rice with you chefs.

I was planning to share more useful facts about rice with you. There is a lot to talk about Rice. That I can't finish within these questions. @emsonic - we already discussed about the rice. He is the inspiration to write about RICE. I will post that in the upcoming days.


1.- What type of rice do you prefer white or integral?

Our family is more concerned about the health of our family members. So we used to eat white, brown, and black rice. But we take brown and black rice once or twice in a month. White rice will be in our everyday meals.

The name of the white rice variety is called THOOYA MALLI (In English - Pure Jasmine). Which we cultivate on our own.
We harvested it in April 2022, and after about 6 months now we are using the rice for cooking. When the rice gets older then the taste and quality of the food are also increased.


2.- What types of meals or desserts can you make with rice?

Usually, we take it as cooked rice with some gravy made with pulses. And we eat one of the world's best morning breakfasts which is called as IDLI. IDLI is kind of steamed rice ball. We like to eat hot idlis with spicy curries like chicken or mutton gravy.

The idli which you are seeing above in the image is made up of Black Rice. It is really healthy and tasty like normal idli.

BROWN RICE PONGAL

We used prepare lot of dessert with rice. Actually in Tamilnadu, India we celebrate festival for worshipping the Sun and Farmers on every year January 14. On that day we used to cook dessert called PONGAL. It is a traditional dish prepared from the newly harvested rice, boiled in milk with jaggery. And we add Cashew, kismis and Cardamom powder.


3.- How do you cook the rice, fry it or simply put water on it.

We always eat cooked rice only. We never use steam cooker to cook rice. We cook it in boiling water, then we filter the rice gruel. You can drink the gruel adding little bit of salt and turmeric powder in it. If you are suffering with cold then this is the best medicine.

You are looking at some colorful cooked rice above. Mushroom Biriyani, Pudhina Rice, Tamrind Rice, Lemon Rice, and Curd Rice each has a unique taste. YUMMY....!


4.- What is the main companion of rice.
India is filled with more spices. So we make lot of spicy curry. Both Non-Veg and Veg curry suits better with cooked rice. My favourite Vegitarian curry is Drumstick Sambar(gravy) with Potato fry. And my favourite non-veg companion of rice is Fish curry, also like chicken and mutton curry.

5.You consume rice daily?
Yes, our regular food is rice only. It always there in our menu. But we make different curry each day only that will differ. It never looked boring to eat rice daily.
And we have special dish made out of the rice which is leftover with out eating. That is called as Neer Aagaram. An the end of the day if any rice leftover, then we fill it with water. Then next day early morning, we drink it in empty stomach. This is one of the best probiotic food in the world i will say. It recharges the entire human body within a minute. 6.What are the benefits of rice.?

Surely rice has more benefits in it. But processed rice don't have that much fiber contents, that has only carbohydrates. The more polished white rice is less in health benefits. Unpolished or single polished rice is best to consume. The top layer of the rice has the most benefits. So when you buy rice please make sure about the quality.
Here in Tamilnadu, India we have lot of traditional rice varieties.
And their benefits are:

  • Rich in Iron and Zinc
  • Gives Blood sugar and oxygen needed by muscles and tissues.
  • Reduces the unwanted fat in the body
  • The fiber in it helps in digestion. This prevents heart related disorders too
  • Prevents intestinal tumors
  • Hemoglobin increases. Contains micronutrients rich in vitamin B1 and relieves stomach and ulcer related disorders
  • Nervous system, blood system, muscular system improves
  • Helps prevent diabetes
  • It is able to overcome the deficiency of low bone density in women
  • It is high in antioxidants.

Yes,because compare to white rice those are very costly. Not possible to handle it.

In my child hood,we too having lands,we harvest and consume those. Even idli rice also we prepare by boiling harvested rice,but now no lands,so buying on Market,asking its a older or new.

Thank you for sharing your traditional rice recipes in India. I haven't tasted those rice Pongal and idli in your country. But I'm familiar with curry on rice. I enjoyed reading your post.
