Creativity time! #12- It's three leaved yam day (AKA ji ona)

Last week was awesome because we are in the festive season and so I went local to bring you local African dishes. I hope you enjoyed my meal last week? Did you miss it? don't worry, you can check out here.

Today is another day/week I bring to you another African local dish called three leaved yam or bitter yam (ji ona), yes it's another local dish in Africa and you know what, we don't eat this one with fork or spoon, are you wondering what we use? It's your finger, yes you use your bare hands to eat.

Three leaved yam is the general name but know as ji ona in my local dialect. Three leaved yam or bitter yam is a root just like yam.

Procedure

Detach each bitter yam from each other, don't peel the back. Put in a pot, add water and place on fire. Do not add salt, cover the pot and allow to boil. This yam is not cooked the normal way like the normal yam because it takes a longer time to get done.

You have to put a lot of water to cover the quantity you want to cook. Allow it to boil till the water starts drying up, you add another water to continue cooking.

To know when it is done, the yam's back starts having a breakage, that way you are sure it is done. You can also check with a fork but that sometimes doesn't guarantee it's done.

Once it's done, sieve the water off and cover. In a plate take the portion you wish to eat and peel off the back.

In a separate plate add your oil, pepper and onions if you so desire. But I used another method; I prepared a source for it.

Add grinded pepper in a plate, add a little crayfish and add a watery potash and mix together, add salt to taste.

Now, you can eat your three leaved yam peaceful with your bare hands.

I have come to the end of the week's cooking. This very simple,no much processes. You can try it out, don't mind the bitterness it's good for your health and yes, very good for the diabetic patients.
