I was off last week due to Christmas preparations, but hey, I'm back with an exciting meal to share with you. If you are just joining for the first time, you are welcome to Nina's kitchen where we share exciting and sumptuous dishes from Africa, I hope you find them interesting. Enjoy your stay!

Today's meal is grated water yam. In my local dialect, it is called ikoko. There are different ways we can prepare this grated water yam but this pattern I used was the simplest one but stressful though.

Do you know what is water yam? Just as the name implies, it is another type of yam and you know yam is a root vegetable which is just like a potato. Yam are rich in vitamins and minerals and are very nutritious.

I will share with you the ingredients, and the procedure to cook this sumptuous meal. Just follow my pattern and you get it right.

Ingredients

🔹Water yam
🔹Red oil
🔹Crayfish
🔹Onions
🔹Fish
🔹Seasoning cube
🔹Pepper
🔹Salt
🔹Scent leaf

How to prepare grated water yam

🔹Slice and peel the water yam, wash with a clean water and set aside.

🔹Get your grater and a tray and start grating the sliced water yam bit by bit. Continue this process until the peeled water yam is grated. Add an amount of salt to the grated water yam and mix together, allow the salt to settle into it and set aside.

🔹peel your onions, slice the onions and set aside. Blend crayfish and set aside.

🔹Now pick the scent leaf and wash thoroughly. Slice it into your desired size and set aside. Wash your fish and set aside.

🔹In a neat pot, add an amount of water. Add all the ingredients you need to prepare this meal. Cover the pot and allow to boil.

🔹When the water boils, add an amount of palm oil and allow to boil a little while.

🔹Now the work begins! Start molding the grated water yam into a ball shape and putting it right into the pot immediately.

Note; You need to be as fast as possible when moulding and dropping into the pot so that all will be done at once.

🔹Cover the pot when all the grated water yam has been moulded into the pot. Allow to boil.

🔹Now your meal must be ready, add the scent leaf and adjust for salt.

🔹Stirr all together and taste for salt.

🔹The meal is ready!
