If you go to any Bengali house in festive time you'll find Aloo Koraishuti (Green peas with potato) and Luchi, one kind of deep-fried flatbread. Tough this is not a festive period still I made this ultimate Bengali comfort food. It is a vegetarian dish. Vegans will love this too. The best part is we don't put garlic or onion in this dish. But believe me, you'll love this style of cooking and taste of it. So Let's jump to the fun part.

This is two-part dish. First making of homemade spices. In Later part we will make the Aloo Koraishuti.

Ingredients

  • 200gm Peas (Frozen)
  • 4 Potatoes
  • 1 Tomato
  • 4 Green Chilies
  • 1tsp Black cumin
  • 1tsp Turmeric Powder
  • 1tsp Cumin Powder
  • 1tsp Red Chili Powder
  • 100ml Mustard Oil
  • 1tsp Plain Salt
For Homemade Spices
  • 1tsp Cumin
  • 1tsp Fennel Seeds
  • 1tsp Black Pepper
  • 1tsp Ajwain
  • 1tsp Coriander Seed


Ingredients

Firstly I washed all the vegetables peas, potatoes, tomato, and green chilies. After a good wash, I peeled off the potatoes, cut them into small pieces. Then I took the tomato and cut it into small pieces too. And slit the green chilies in half.

Homemade Spice

  • (1) Put the pan on the induction oven let it heat for a little to evaporate any excess water.

  • (2) I added all the whole spices, 1tsp Cumin, 1tsp Fennel Seeds, 1tsp Black Pepper, 1tsp Ajwain, and 1tsp Coriander Seed. Let it dry roast for a bit.


Dry Raost

  • (3) Then added all the roasted spices in the grinder.


To the grinder

  • (4) And grind till spices were powdered.


Spice is ready

Aloo Koraishuti

  • (1) I add 100ml of mustard oil onto the same pan, let the oil heat for sometime.


Mustard Oil

  • (2) Then I added 1tsp black cumin to the oil, fry for seconds. This process is called for in Bengali. Put all pieces of the potato in the pan, fry for few seconds.


Fried Potato

  • (3) I added 1tsp turmeric to the potatoes and fry them till the skin of the potato is slightly crispy.


Vegies

  • (4) Added all peas, tomatoes, and green chilies to the potatoes. Sprinkled 1tsp turmeric powder, 1tsp cumin powder, and 1tsp red chili powder.


Masala Addes

  • (5) Mixed them all and added 1cup of water. Let them boil for a few minutes till water dried up.


Koshano

  • (6) Now I added 3 cups of water to properly cook and for the gravy.


Water Added for Gravy

  • (7) Put the lid on top of the pan. Let it boil for few minutes.


Put on the Lid

  • (8) When the gravy thickens I put off the lid. Then added the homemade spices mix them to the gravy and turn off the gravy.

  • (9) Aloo Koraishuti is ready!


Aloo Koraishuti

Best if you eat it with any type of poori or flatbread.
