What is that dish that you always make at home that makes you happy?

Tamil New Year is celebrated on 14th day of this month. One of the most exciting aspects of Tamil New Year celebrations is the traditional feast that accompanies it. The feast usually consists of an array of delicious vegetarian dishes that are not only delicious but also symbolic of the abundance and prosperity that the New Year promises. Often served on banana leaves, the food includes everything from sweets and savory snacks to elaborate rice-based dishes and seasonal vegetables. It is important to note that Vada and Payasam. I love making the vada, it is our culture to serve meals must include vada with payasam which mean sweet with spicy.

What ingredients or culinary techniques make this dish special to you?

Masal Vada is a simple dish, and everyone likes it, Chana dal, onions and spices like cumin and coriander seeds are ground into a coarse paste and then shaped into flat patties before being deep fried, making for a crispy and delicious snack. Vada is served hot and goes well with other traditional dishes like sambar, rasam and kootu. Masal Vada is not only tasty but also nutritious as it is rich in protein and fiber. It is a must-have ingredient in any New Year's meal and the first delicacy to disappear from the tables!

Soaking theChana dal for 1.1/2 hours will make the vada crunchy. After soaking, strain the water, put them in a mixer jar and grind them. Next add salt to the soaked Chana dal and mix them well. Grind them to make roufg dough not soft like few Chana dal should remain half or full. Now put the ground flour in a wide pan. Add chopped onions, green chillies, mint, coriander leaves, ginger garlic paste, cummi seeds and mash it. Make sure the salt is correct. Now pour oil in the pan and dry it well.

Next, wet your palm with water, take a small amount of dough make it roud ball and pat it in a flat circle on your palm and drop it into the oil pan to fry and cook well. Put them one by one and fry until goldenand take them out to dry. That's all the delicious masala vada is ready.

How would you share the happiness that this dish brings you with others?

Tamils generally serve this vada and payasam along with it in all feasts. This treat is served on a banana leaf. A treat served on a banana leaf is sure to be special. In traditional tamil food, this vada and payasam is definitely served with rice, appalam, sambar, rasam, curd, fries, vegetable mix, pickles, tamarind gravy, etc. So I like to serve this vada payasam with other dishes to my house guests.

If you could share this dish with one person, who would you choose and why?

Actually I want to make this Masal Vada dish and serve it to many people but since I have been asked for it by one person I want to make it to my son my first fan is my son who appreciates any food I cook the most and for him I am used to making a lot of dishes.

Now pour oil in the pan and dry it well.It sounds like you're making Chana dal vada! Letting it soak for 1.5 hours should give it the perfect crunchiness. Grinding the dal to a rough texture will add to the texture. Adding all those flavorful ingredients like onions, green chilies, mint, coriander leaves, ginger-garlic paste, and cumin seeds will definitely enhance the taste. Frying it in oil until it's crispy will complete the dish! Enjoy your cooking adventure!😇😇😇😇😇
