LearnWithSteem: Unique Recipe of Afang & Melon Soup

Welcome to another episode of my LearnWithSteem food article. Chefs are among the most creative people in the world, they always have the mindset of exploring through different ingredients by trying new recipes to perfection without fear.

Today, I want to share a unique recipe with everyone here, I have tried this recipe in the past and I liked how it turned out although it is not a regular soup recipe here in my region.
Yes, it is a recipe of Afang leaf and melon combination. I thought of a better name to give this recipe since both the leaf and melon are same quantity and came up with this; Afang and Melon Combo. Hahaha….
Here in Nigeria, if we are using Afang leaf, we must prepare the recipe with water leaf and that's when it can be called; Afang soup.
For melon, it can be prepared with the following leaves by adding little amount of it and call it; Melon soup
- Melon + hot leaf
- Melon + bitter leaf
- Melon + water leaf
When preparing all the above listed methods of melon, then melon should be greater than whatever leaf being used.
In this new recipe, I will show the preparation procedures for making Afang & Melon and the ingredients used.

- Melon
- Afang leaf
- Iced fish
- Onions
- Fresh pepper
- Periwinkle
- Salt
- Maggi
- Palm oil ( red oil)
- Crayfish

Preparation Procedures |

Step 1: prepare the ingredients; slice onions, blend fresh pepper, clean the fresh fish with hot water and put a little hot water in the melon, stir and cover for few minutes.
Mixing melon
Step 2: put the fish into the pot, add ingredients ( onions, fresh pepper, salt and maggi), a little drop of water and steam for 6 minutes.
Steaming process
Step 3: pour the mixed melon and cook for about 10 minutes. I like to cook my melon properly to avoid stomach upset.

Step 4: Add palm oil, maggi and salt then cover to continue boiling for 1 minutes.

Step 5: Add periwinkle, fresh pepper and crayfish then allow it boil for 3 minutes.

Step 6: this is the last step, add Afang leaf (blended one) and boil for just 1 minute and your delicious delicacy will be set to be served.

Here's the outcome served with garri. You can also serve with fufu, semovita, pounded yam or potato poundo.
