Welcome back again to my recipe blog where I always share a unique and amazing recipes for everyone to learn from and also improve their cooking skills. Today, I have a special recipe to share with my fellow chefs and it is a recipe of periwinkle sauce.

Periwinkle is a seafood with shell used in making several foods like different types of soup or porridge. Periwinkle sauce can be prepared with just simple ingredients and it is mostly enjoyed by Nigerians.
The preparation process of periwinkle sauce is simple but requires carefulness. I will share the ingredients and the preparation methods of this delicacy.

- Periwinkle
- Cow skin
- Fresh pepper
- Onions
- Maggi
- Salt
- Tomato paste
- Native nutmeg
- Utazi leaf (Amaranth globe)
- palm oil
Preparation Procedure |

Step 1: the first step is to cut the periwinkle into two and throw away the bottom part of it. Wash the mud out with clean water severally. After that, pour it into a pot and add salt with little hot water and leave it to cook for 5 minutes.

Step 2: steam the cowskin, wash and slice the leaf. Check the periwinkle and remove it to be washed again and then filter out the water.
Step 3: set pots to dry before putting palm oil and onions. Add tomato paste.

Step 4: burn, pound and add native nutmeg to the sauce.

Step 5: add a little water and allow it to cook before adding steamed cowskin. Allow water to boil and dry off then pour the periwinkle and cover to cook for 3 minutes.

Step 6: lastly, add the utazi leaf and let it cook for just 2 minutes (this leaf is extremely bitter and it is very good for the health).

Now look at the delicious periwinkle sauce.
It can be served with palm wine ( optional).
