INTRODUCTION

It started in the year 2015, when I came to Akwaibom state for my NYSC, in the camp there was new food introduced in the camp, I didn't like it the first time, but when I ate the second time i have to make it my best, and guess what today it has become the most special food in my life. Let's see how this food is cooked.

What is the name of the special food?

Ekpang Nkukwo this is a special food from Akwaibom state. It prepared with so many condiments. Ranging from protein, vegetable,oil and many others.

Where did you eat this food? Or if you have a recipe, you can share it.

I have eaten this food in several places ,but the last one I ate was from my friend's house. I have tried cooking it in my house but i heard difficulty in wrapping it with the leaf, and this made me to cook it like porridge.hahaha.

Here are some recipes that I know.

• Coco yam
• Water yam
• Meat or fish any one
• Red oil
• Pepper
• Salt
• Seasoning cubes
• Crayfish (optional)
• periwinkle (optional)
• Scent leaf
• Potato leaf or new coco yam leaf.

I would like to also talk about the procedures of cooking this food.

Get your recipes as I have mentioned above ready, start by peeling the coco yam, and the water yam, wash thoroughly and blend or use greater to do manually, after that mix the two together very well and wash your wrapping leaf, and start cutting and wrapping it bit by bit, next thing is to put your empty pot on the gas add hot water allow it be boil , then put your wrapped ekpang . Cover to cook a little finally add your per boiled ingredients and add everything together allow to cook for sometime ,Then my special food made ready.

Why is this food the most special food you eat in your life?

Like I said I learned to eat this food during my service year, the teste of this food is what everyone will want to beg for more. And it comprises of so many nutrients. It's a very solid food that gives me strength.
It helps to gain little weight.
It is super delicious. If it was possible I will like to be eating it every day.

And why would you encourage everyone to eat this food?

I would want everyone to eat it because it has almost all the balanced diets needed in every meal.

It easy to digest .

It's also easy to swallow.

It's very good for proper functioning of the heart.

It has no side effect, it's a native food good for our health.

It's a special food not only for me but for the entire Efik .
