STEEMFOODS: UTAN BISAYA (MIXED VEGETABLES SOUP)

Good day steemians, How are you today? Hope your okay despite of the pandemic we are facing right now. Today I will cook a portion of very healthy and delicious food we called this UTAN BISAYA in Cebu. We need this kind of food, it helps us boost our immune system to fight any kinds of viruses including COVID 19.

WHAT: Utan Bisaya or Mixed Vegetables Visayan style soup, mostly the ingredients of this soup is whatever veggies might be available in the back garden. Expect okra, eggplant, kamunggay leaves or moringa leaves, alugbati or Malabar nightshade, sikwa or sponge gourd, and squash with some fried or dried fish for additional flavor. But in my style of cooking utan bisaya I will not put fried fish nor dried fish because my baby might choke with the fishbone.

By the way, this is our back garden we planted it just last year during the lockdown, except for the moringa.

INGREDIENTS:
5 leaves of malunggay (moringa)
2 pcs. eggplant
3 pcs. okra
1 pc. sikwa (sponge gourd)
2 cups squash
5 stems of alugbati (malabar night shade)
half liter of Water
seasoning (salt and vetsin (optional) or magic sarap))

PREPARATIONS:

It took me 30 minutes in preparing all the ingredients. Before I start chopping the vegetables I washed my hands and the vegetables.

*Chop the squash into cube or dice like the picture below.
Trivia: squash is a very nutrious vegetable it is rich in vitamins A, C, and B6, magnesium,folate, fiber, riboflavin, phosphorus, and potassium.

*Chop the talong or the eggplant into elongated(basta pataas bah).
Trivia time: Eggplant is rich in vitamins & minerals, they are rich in vitamin C, vitamin K, vitamin B6, thiamine, niacin, magnesium, manganese, phosphorus, copper, fiber, folic acid, potassium, and more! ( Note: Trivia not mind)

*Next is the Okra. Chop it like the eggplant.
Trivia: Okra is a nutritious food with many health benefits. It's rich in magnesium, folate, fiber, antioxidants, and vitamin C, K1, and A.( Note: Trivia not mind)

*Next in line is the Sikwa or the sponge gourd. I peeled it and chopped it in a circular way. Like the picture below.
Trivia: Sikwa or Sponge gourd contains high amounts of dietary fiber, vitamin C, riboflavin, zinc, thiamine, iron, and magnesium.( Note: Trivia not mind)

  • We separated the Mallunggay or Moringa Leaves to the stem. I have a little helper :)
    Trivia: Malunggay or Moringa leaves has many important vitamins and minerals. The leaves have 7 times more vitamin C than oranges and 15 times more potassium than bananas. It also has calcium, protein, iron, and amino acids, which help your body heal and build muscle. ( Note: Trivia not mind)

  • Lastly, the Alugbati or malabar night shade, same as what we did to the malunggay we separated the stem to the leaves.

  • Done preparing and were ready to cook already!!!

INSTRUCTIONS:

  1. Fill pot with water. Turn fire to medium heat and add the squash, wait until it boils.

  1. Add the okra and stir then boil for 1 minute, add the eggplant.

  1. Boil for another 1 minute then add sikwa.

  1. Add alugbati and malunggay. Stir. Boil for another minute.

5.Season with your favorite seasoning. I seasoned it with salt, pepper and magic sarapb then turn off the heat after 1 minute.

Note: Do not overcook the veggies. Once the heat is off vegetables continues to cook.
