Club5050 || Chicken Lechon Paksiw With Green Leafy Vegetables - A Healthy Twist! || By @maris75
My warmest greetings to Steemfoods community. I hope everybody is good.
We all aware that covid virus still existing around us. Staying healthy is one of our priority. We can make and create healthier dish through having a twist recipe in our table without spending more money.
Today let me share to you my zero spend healthy dish for the day. Since I had a left over chicken lechon yesterday, instead of making it a paksiw alone, I decided to add it with these healthy and nutritious vegetables which I harvested it from my backyard like okra, sweet potato leaves, and spinach.
My Ingredients:
Left over chicken lechon
Spinach
Sweet potato leaves (young)
Okra
Camias
Sili espada
Red onion
My Cooking Procedures:
1.) I simply add some spices like sili espada and red onion in the chicken lechon. Instead of putting vinegar I add camias. Put small amount of soy sauce and also I add 1/2 glass of water. Then let it boil.
2.) After boiling for around a minute add okra. Let it boil for another 1 minute.
3.) Add the leafy vegetables like spinach and sweet potato leaves. Then let it boil until the vegetables soften or cooked.
4.) Mixed all the ingredients as it continues cooking. Seasoned it with salt and ajinomoto. Get my desired taste and it's done cooking.
It's so easy, simple and fast to prepare. The taste of the paksiw still dominating. This is my first time to explore this recipe and it taste deliciously nutritious.
This is now ready to serve, let's eat!

Only now did I find out that vegetables can be added to the paksiw recipe. Nice idea of utilizing leftovers.
The good thing here is we can create our own strategy in utilizing leftovers sir. In such a way we can save our expenses too. Thank you so much sir @juichi for dropping by.
