THE DIARY GAME SEASON 3//THE NEVER ENDING SEASON: MY ENTRY FOR 07/10/2021. My recipe on Fufu corn and kahtikati

Hello my dear steemians and welcome to my new recipe on how to prepare; Njama Njama(Huckleberry leaves) and Kahtikati (chicken) Using Groundnut oil.

Huckleberry leaves is a vegetable that can be cooked using different methods. Some can be cooked in a typical traditional way using red oil but here I am going to be using Groundnut oil.

Before we start, I will first list out the ingredients

INGREDIENTS

  • Njama-njama (Huckleberry)
  • Fresh tomatoes
  • Onion
  • Groundnut oil
  • Seasoning(Maggi, salt)

With all the ingredients above, I am ready and set for the kitchen. Follow me to the kitchen let's start. It's going to very interesting you know 😄

Method of cooking

  • To select the huckleberry, take out the strong stems as well as the yellow leaves of the huckleberry. Slice the vegetable if you whish. I didn't slice mine because the steps were soft and the leaves too are of the small size. Mainly slicing is done only for the big leave type of huckleberry. After doing the selection, wash it several times and ensure that it is clean. Put in a pot and boil. Strain it when it's done. Fellow the pictures below for a better understanding.

  • The next step now is to Slice the tomatoes and onions.
  • Heat some groundnut oil in a pot. Add the tomatoes and onions. Let it fry as you stir from time to time. Put the seasoning.
    .Add the vegetables and stir so that it mixes well. Let it cook together for a few minutes. Taste to make sure it is well seasoned.
    If it is well seasoned, you can now serve it.

Once your Njama Njama is ready, you can go on to prepare your Kahtikati.

PREPARATION OF KAHTIKATI

To do this, you just need your chicken cleaned off. Then you can now slice It into different shapes of your choice. Once you are done, you boil it as seen below.

Once it is boiled, prepare your tomatoes and onions and fry. When the onion and tomatoes are ok to your taste, you then put in your chicken.

At this stage, you can now taste for your sessioning. If everything is ok, you can now serve with Fufu corn or any starch of your choice. I love mine with Fufu corn. Good appetite to all.😋😋😋
