Pleasant greetings to all members of this great community, I'm happy to participate in this contest in which I will be representing my country to tell you about the recipe that's is perculiar to my country Nigeria especially pertaining to Yoruba ethnic group.

What Special Recipe is Peculiar in My Country

There so many recipe peculiar to my country in which some are clearly associated with the ethnicity and culture. I will be representing my ethnic group which is Yòrùbá where I will be the recipe that's is perculiar to the tribe.

Today I'm will only be promoting and not preparing the recipe because of personal reasons that happened. A recipe is a kind of dish that's associated with a particular country, to the extent that it distinguishes different culture and speaks high value of a country. Some will say that foods is also one of the way of presenting the nourishment of a particular country or culture. Food actually talks of how blessed a culture is especially good looking food.

The name of the recipe I will be promoting today is Amala it's a swallow food just like semovita and pounded yam. It is a recipe that's most popular among Southwest of Nigeria known as Yoruba. There are lots of recipes that is perculiar to my country Nigeria, the likes of Pounded yam, Egusi, Ogbono, fufu and so on.

Recipe can help to trace the origin of a particular set of people because recipe represents an entire country, culture and likewise in a way present people's value. So also is Amala attached to to the native to the Yoruba ethnic group in southwest of Nigeria. Amala presents how much a typical Yoruba man or woman by nature values and represent yoruba culture. Our food is part of our culture

History has it that Amala was first prepared by a woman called Aduke Agbedegbeyo in 1052 during the reign of Sango who was the Alaafin of Oyo(the king of OYO). Amala is a swallow food that's is majorly tagged to Yoruba people it mostly accompany by a soup called Gbegiri (Gbegiri is a soup made from a peddled beans).

The ingredient needed to prepare Amala is yam flour which is gotten from a raw yam known as èlùbó in Yoruba language ..

How To Make Yam flour.

Yam selection: the reason of making selection of yam is because types of yam used will determine the quality of the Amala. So a matured fresh yam tuber is most suitable.

Peeling and slicing: This is the process where you first peel the brown thick skin of the yam then follow by slicing.

Rinsing: The sliced yam is then rinsed. It's preferable to rinse with warm water just like my mum taught me.

Drying: The is the process where you dry the sliced yam under sun or using any other drying method for total removal of water or liquid particles.

Milling: This is the process whereby you grind or milled the dried yam to flour.

Sieving: This is done to give the milled yam flour a uniform size and to extract big particles.

And your yam flour is ready

Procedures for making Amala

After having your yam flour available. Follow these procedures

Step 1: Put a measurable water on fire (the water depends on the amount you want to make) and allow to boil.
Step 2: After the water is boiled add your yam flour while still on fire and make sure you're continuously stirring to avoid forming lumps.
Step 3: Bring it down and keep turning for a while
Step 4: Put it back on fire and add little water note don't stir, allow it to heat for 5minutes.
Step 5: Now you begin to turn it again until it's fluffy and free of lumps.

What are the health benefits of Amala.

Amala have so many numerous health benefits some of it which are it is rich in Vitamin C which helps in repair of tissues and to prevent and treat scurvy.

The flour yam is rich in fibre which helps to reduce low-density lipoproteins this literally helps to reduce high cholesterol in the body.

This will help reduce any heart-related conditions that high cholesterol in the body might cause.

Amala is safe to be eaten by diabetes patience due to the fact that it is easy to digest and absorb carbohydrates from Amala.

Conclusion
Amala is a very unique food among Nigerians and can go with any soup. Amala is one of the most sorted food in Nigerian parties the food has a good taste and it's highly nutritional. Preparation of Amala doesn't take much time but it requires strength and continuously turning till it is done. As simple and short the procedure for preparing Amala is, some Nigerians still find it hard to make a free lumps and fluffy Amala especially among men because it's require some technique to make a perfect Amala. It is mostly our women that knows how to make Amala perfectly. There some restaurants abroad that serve Amala as one of their delicacy because of its popularity and people wanting to try it out.

Amala is one of the best meal in Nigeria mostly from the Yoruba region. And it can go with uwedu soup. Thank you for sharing the procedure my friend. You actually did a grate job. here is my entry too you can check it.
