  • To make cowpea fritters, we must first soak the cowpeas in water for 3 or 4 hours. The water we heat and soak does not take much time. Here I have kept cowpea soaked in hot water. When the cowpea is well soaked, then we have to fry the cowpea in the flour. You can grind it in the mixer. But it tastes good when roasted in the khalan. That's why I am roasting it in flour.

  • I have taken 250 grams of cowpea here. I have tried all the cowpeas well in the khalan. Then we have to grind dry red chilies, dry coriander, and garlic also in the powder. You fry these ingredients in agar khalan. So because of this, our Lobia Pakodas taste great. That's why I have grinded this material in a mortar. You can use anything to grind it.

  • We do not have to roast the cowpea much. Keep in mind that cowpea should not become like a paste. We have to add fried red chilies to the roasted cowpea. We have the garlic and coriander we have also ground in the flour. We have to put that too in the cowpea paste.

-Now we have to add red chili powder, turmeric powder, coriander powder, salt, black pepper, and cooking soda to the paste of cowpea. Add the green coriander which we have also mixed it well. Finely chop the onion as well. We also have to add finely chopped onion and gram flour to it. We have to add onion last. Because adding onions early makes it watery. That's why our cowpea fritters don't turn out to be tasty. So here I have added onions after adding all the ingredients to the paste of cowpea.

  • Mix all the ingredients well and let them rest for a while. Then we have to heat the oil in a pan. When the oil becomes hot, we have to fry the labia pakoras in the oil. When the cowpea fritters start to look golden, we have to take them out of the oil.
