Hello fellow Steemians. Welcome to the week 52 of this challenge. Here if like to share with you how to make vegetable soup, known in my dialect as edikan ikong. As usual, we'll begin by looking at the ingredients needed to prepare this soup.

Ingredients

Vegetables (pumpkin leaves) Waterleaves Beef Cowskin Crayfish

Salt
Stockfish etc

To start, we need to wash and cut the vegetables. Also the beef, cowskin, stockfish all need to be washed and steamed.

The water in the pot used for steaming has to be very small, as little as possible. From here, we proceed to adding the waterleaves to the cooked beef, no water should be added still. In addition to the waterleaves, we need plenty palm oil too add to the waterleaves, cover the pot and allow it cook for three minutes. After this, we can put in the rest of the ingredients, plus our fish. This should cool for like 2minutes which will take us to the final stage. The final stage is putting our pumpkin leaves and bringing down the pot. Personally, after washing the pumpkin, I bring it down from the fire and stir on the ground. This is to leave my pumpkin as fresh as possible. The soul will be thick because there's hardly water seen in the soup, it's majorly the oil in the soup. You can choose to have this with either garri, fufu or semolina. Also, ugu (vegetable soup) can be used to eat white or parboiled rice. The soup is simple to prepare as seen above, but it's quite delicious and healthy for the body.

Benefits

The soup, like my mom would tell me, gives blood. It acts as blood booster.
The leaves alone freshly squeezed is very nutritious she provides some minerals for the body.
It also helps in strengthening bones.

When to eat

This good can be eaten mostly in the afternoon. For some, they don't mind eating this at anytime.
