Food Challenge Contest Week #44 || How To Cook Party Jollof Rice

My warm greetings to the members of this community. I hope we all had a good weekend. It's my pleasure to be here about food. I love to cook alot, but, I can't say same about eating.

Today, I would like to introduce this yummy Nigerian most loved delicacy, Jollof Rice. This delicious dish is one of the most popular rice in Nigeria or West Africa. It is also popularly used in many occasions and events.

The Ingredients Required

The ingredients for this meal varies with individual, but i will share what I use for mine.

  • Maggi and salt

  • Nut meg, thyme, curry

  • 1 tin tomatoes

  • Onions, pepper and crayfish

  • Mixed spices(dried ginger, garlic, curry,etc)

  • Rice

  • Meat and vegetable/groundnut oil.

Preparation Process

  • First, I wash my rice and put it in a pot of water to cook.

  • While my rice is cooking, I simply make the tomatoes sauce I will use to cook the parboiled rice. So, in a pot, I put my vegetable oil and add salt to it when it steams.

  • Then, I added the onions to fry

  • Then I added the tin tomatoes in the quantity I want and allowed it fry for sometime.

  • Then, I grate in my nut meg with a manual grater.

  • I add the needed quantity for my rice to cook till done. After this, I add the rest of the ingredients; thyme, curry, mixed spices, crayfish, pepper and maggi and allow it steam.

  • Once the tomatoes sauce is steaming, I start adding my washed rice in bits till I add all.

  • I like to finish this by adding my cooked goat meat on top of the rice with sliced onions and cover it to cook.

  • Once the water dries up, the rice is done and ready to be served.

This delicious dish can be served anytime, breakfast, lunch or dinner.


Health Benefits

Due to its healthy and nutritious values, Jollof Rice contains; protein, carbohydrates, fibre, iron, phosphorus, copper, etc. The health benefits includes;

  • The tomatoes used for this delicacy provides vitamin C and K, potassium and folate and acts as an antioxidant in the body.

  • The carbohydrate in the rice provides energy for the body and it can keep you filled the whole day.

  • This meal is easy to digest and it strengthens the immune system.

  • Tomatoes reduces the risk of the heart to get diseased and cancer.
