My Food
Hello everyone, I am so excited to be a part of this contest. Taking photos has always been exciting to me and food photography is no exception. I will be driving your taste buds down to the southern part of Nigeria. Welcome to Akwa Ibom state friends, a land of many delicacies and soups ranging from afang soup, editan soup, edikan ikong soup to afia efere; you will be entertained with photos of healthy and good food which was carefully prepared and garnished. I will be using their native names so whenever you pay a visit to Nigeria and Akwa Ibom specifically, you will know how to call the delicacy by its name.
Edikan ikong soup which is generally known as vegetable soup in Nigeria is a soup prepared with the leaves from fluted pumpkin. It is prepared with water leaf and garnished with meat, stockfish, fish and periwinkle (optional).
The soup is complemented with garri. One can choose to use the hands in eating or cutleries like table knife and fork.
Edikan ikong soup or vegetable soup is highly nutritious and full of protein. It is a pleasure-motivated creation that not only releases the taste buds into a heavenly moment but also has the following benefits:
Edikan ikong soup is rich in vitamins and this can help to improve the immune system. You can not dig into a bowl of this soup and not stand up with a better immune system
It helps to increase blood production in the body. This soup can make the blood production duty of the heart easier.
It can reduce blood pressure.

The king of soups in this part of the world is afang soup. It is made from afang leaf which is known as Wild spinach in English and gnetum africanum as the botanical name. The soup is prepared with water leaf and garnished with stockfish, fish and meat. It is highly palatable and nourishing. It is consumed with garri.
Afang soup has the following benefits;
It boosts immunity and helps the body against diseases.
It is a good source of dietary fibre and will help in digestion and also weight loss, which is very good for the body
It is also rich in vitamins which will in turn boost the immune system
It improves the reproductive health of humans.
Most occasions in Akwa Ibom state usually include afang soup in their menus because of how nourishing and nutritious this food is. A dip into the bowl of this soup with garri is heavenly.
I do love afang soup very much, it is the delicacy I eat most and that is because of how it is cherished in this part of the world.
Edikan Ikong and afang soup are nutritional and also nourishing, and I am excited revealing this two soups and it's benefits to the world.

EDIKAN IKONG and AFANG are very special meals that is mostly eaten by the Efik/IBIBIO people. Here we love eating them but my children prefer AFANG soup. You have presented very good photos of the foods. We are happy to see your participation in the contest
