Greetings to my fellow steemian. Am glad to make my entry available this week in food diary contest. This week I will be showing you how I cook one of our local soup called

Editan Soup. This soup can be made using okro, melon, water leaf, with Edusa leaf or just like that depending on what you want but today am going to use water leaf in cooking this soup. Watch out as I begin.

Ingredients

  • Dry fish

  • Editan leaf

  • Beef

  • Crayfish

  • periwinkle

  • Stockfish

  • Cowskin

  • Red oil

  • Water leaf

  • Seasoning cubes, salt and pepper, onions

Method

  • First was to wash and season the meat, Stockfish, Cowskin, periwinkle using onions, salt, seasoning cubes, Pepper and set it aside.

  • Wash the water leaf, slice and set aside.

  • Boil hot water and pour on the slice Editan leaf, add a pitch of salt, cover the container containing the Editan leaf and allow it for some minutes.

  • Wash the fish and put on fire. As the fish is on fire, open the Editan container and start washing it by squeezing it in your hand and pouring cold water until the bitterness in the Editan leaf is no more.

If you like a bitter taste, you can as well taste the leaf as you are washing so as to know the level of bitter taste you want. But for me, I don't like Editan bitter taste, so I wash all the bitterness out so as to enjoy my soup.

  • Checking back my fish, it soft and the color of water has changed so I added the seasoning meat, Stockfish, Cowskin and periwinkle.

Stir and have a taste to know if I still needed more ingredients. Then I add red oil in the stock and allow it for more minutes.

  • After about 5-10minute, I opened the pot and add the slice water leaf and grounded crayfish and leave it for 10minute .

At this point, you don't have to close the pot in order not to have excess water from the water leaf, so the pot has to be open.

  • Finally, you add the wash Editan leaf,

stir, add more oil as this soup needs enough oil to bring out the best and allow for 2minute. After this minute, off the lights, the Editan soup is ready to consume.

This soup can be used with any type of swallow. Swallow is good to be taken in the afternoon as lunch as it will make you feel heavy. It can also be taken at anytime depending on individual decision.
