Steemit Engagement Challenge / S19W4 - "My city special bites ."
I'm from Nigeria the gaint of Africa, I live in the city of Uyo in Akwa Ibom state. In my city we have varieties of food that captures the minds and hearts of people living in it, and in this different foods it has different taste and recipes that satisfies the people in my city.
When it comes to Nigeria's culinary culture, it is as rich and diverse as Nigeria's population. The special bite in my country is no other than Nigerian swallows. Anything swallow we like it so much, it is our best food over here.
Fufu swallow with Afang soup
That is the reason, these staple foods plays a vital role in Nigerian cuisine. The main ingredients of some of these swallows are usually starchy roots of plant or grains that are either processed wet or dry. While preparing the swallow, it is boiled, then pounded or ground into a fine flour, and then cooked to achieve a smooth, dough-like consistency that is eaten with delicious soup.
Why are they called “swallows” ?
It is because of the method of eating it, we used our fingers to take a morsel of paste, then dip it in soup, and swallowing it. So this method makes us call it swallow.
What are the swallows made from?
- Cassava; it is a root of plant used to produce a variety of swallows including Garri, starch and Fufu.
- Yam; is also a starchy root used to produce pounded yam. Amala is also produced from yam.
Grains; such as millet, maize, rice, wheat and oat

Please note that all this swallow has it own soup that is accompanied with to make it really tasty. They are all available in the city I live in, the most latest trending swallow in my city is AMALA SWALLOW let's talk about it.
But aside from swallow we have different varieties of food, that is why most times when I think of anything I will miss if at all I travel out of my country, is food because when it comes to food we have varieties of it, we are not limited to a particular meal.

In this contest, I want to give a review of a special restaurant that offers Amala in their menu in my city.
Amala is a yoruba cuisine. It is dark, brownish swallow which is made from yam skins or plantain flour. It usually has a slightly sour taste but it is soft in texture, rich in fiber and low in calories.
Amala is mostly served with Ewedu Soup, It is a slimy, green soup made from jute leaves, which gives a unique taste and texture to the meal, It also combined with Gbegiri Soup made from beans. Amala unique flavor and texture promises a memorable dining experience.
In my city, you can eat this special Nigerian cuisine at De Amala lounge. There they have it everyday on their food menu at affordable price. The price ranges depending on the type of protein you want and the quantity of Amala you requested. Their restaurant is clean and spacious for customers, you will be more relaxed when you visit them to eat your Amala swallow.

I and my family like visiting the branch at the tropicana mall to eat Amala any time we crave for it. They are the best restaurants that prepares Amala in my city and we do enjoy their meals.

It is amazing how you described Amala swallow with the soups of Gbegiri and Ewedu. It is surprising how plantain flour or yam skins are used to make Amala.
