Though I am not Popeye; however I love spinach- Here is my recipe.

Happy weekend to you all, and I would like to welcome everyone to my page. Today I am here with a recipe I love to consume during winter.
Because winter is my favorite season, like spinach, and we obtain several vegetables during this season.
As I said, I am not Popeye (the sailor), but I love spinach. So without spending any more time;
Let me share the recipe with you all.

Spinach | 2 bunches(only collect young leaves) | |
Potato | 1 medium size(diced) | |
Runner beans | 3-4 nos.(square sizes, follow picture) | |
Egg plant | 1 no. small size(diced) | |
Pumpkin | 200gm(diced) | |
French Beans | 5-6(1inch size) | |
Cauliflower | 1-2 flowers broken(cut then according to the picture | |
Carrot | 1 medium(diced) | |
Raddish | 1 medium(diced) | |
Cilantro leaves | 1/2 bunch | |
Sun-dried tear droplets( prepared with lentil paste) | 50g | |
Five-spices | 1/2tsp | |
Dried red chili | 2nos(broken) | |
Mustard oil | 3-4 tbsp(or according to your needs) | |
Turmeric powder | 1tsp | |
Cumin powder | 1/2 tsp | |
Ginger Powder | 1/2tsp | |
Salt | To taste | |
Sugar | According to your taste(optional) |

Step 1- Foremost, I collected the young leaves from the spinach bunches. After that, I washed spinach leaves under running water a couple of times and roughly chopped spinach leaves, then set them aside.
Step 2- Once I finished chopping, I placed a wide-mouth vessel on medium flame and added 1-1/2 tbsp of mustard oil. I wait until the raw aroma from the oil evaporates. Then I fried the lentil droplets until golden. Then I take them out from the vessel and keep them aside in a bowl.
Step 3- After that, I added the remaining oil to the vessel;
and again, I lingered until the oil became smoky hot. Then I add broken dried red chili and five spices into the oil.
Step 4- Instantly, I started putting vegetable pieces;
beginning with potatoes, cauliflowers, french beans, carrots, and runner beans. After 2-3 minutes, I added the remaining vegetables.
Step 5- Once the vegetables started goldenly;
Then, add cumin powder, salt, sugar, ginger powder, and turmeric powder. Then I combined all spices with vegetables and cooked for 2-3 minutes on medium flame.
Step 6- Next, I transferred roughly chopped spinach to the cooking vessel and reduced the flame. Then cover the cooking vessel with the help of a lid.
Step 7- After 6-8 minutes, you will see that spinach and vegetables discard water;
simultaneously, the portion of spinach leaves and vegetables would be reduced.
At that time, uncover the vessel and adjust the salt, and sugar.
Step 8- After uncovering the vessel, once I finished checking the portion of the salt and sugar;
I added fried lentil droplets. I didn't add any water.
Step 9- Now, higher the flame from lower to medium, and let the lentil droplets soak into the broth.
Step 10- Do not cover the vessel, and once you get the correct texture like the photograph, add chopped cilantro leaves. Cover the vessel and turn off the flame. Now the dish is ready to serve with steamed rice.
