Every tribe in a country has a traditional food that is peculiar to them. I am a Nigerian from the Igbo ethnic group specifically from Isialangwa south. Where I come from, Eba and Ukazi soup is one of our traditional food that we can't do without.

During occasions like traditional marriage ceremony, funerals, child dedication etc a full fledge Ngwa person cannot do without preparing such a local delicacy. Also, you can never come to an Ngwa person's house during weekends without being served with this local delicacy. And anyone who has enough cash to prepare this soup uses what we call "moulded Egusi" "Akpurakpu mgbam" to prepare this soup and trust me, it adds beauty and taste to the soup while eating it.

The vegetable used in making this soup is gotten from a tree "Ukazi tree" and while cutting or slicing, it is cut into tiny tiny pieces as seen in the image below.

Not everyone knows how to cut this leaf actually because it's not like when you're cutting the normal pumpkin leaf.

Below are the ingredients used in making the Eba and Ukazi soup

  • Ukazi
  • Dry fish
  • Fresh fish
  • Kpomo meat
  • Achara vegetable
  • Egusi or grounded melon
  • Achi thickner
  • Dry pepper
  • Salt
  • Palm oil
  • Seasoning cube
  • Eba

UKAZI SOUP MAKING PROCEDURE

  • Wash your fresh fish, dry fish and Kpomo meat thoroughly and a little salt, pepper and one seasoning cube before you put on heat to steam.
  • Wash your Achara vegetable and add some onions before you steam on heat.

  • And when you're done steaming all of the above, add a little water into an empty pot, add my melon/grounded Egusi and allow to boil very well.

  • Stir the Egusi a bit and then add a little quantity of palm oil and mix together

  • Allow to boil a bit and then add Achi thickner, pepper and salt.

  • Add your already steamed achara vegetable.

  • Then wash your Ukazi leaf and add to the pot and also add the steamed fish and meat.

  • Stir for a while and allow to boil for a while.

And Ukazi soup is ready!😋

The Eba is simply gotten from cassava. After it has been processed it can be used to make the Eba or "swallow" as we fondly call it.

EBA MAKING PROCEDURE

  • Boil water (allow to boil very well)
  • Pour hot water inside a bowl
  • Add the already processed Eba inside the bowl and turn very well with a wooden turner

And Eba is ready to be enjoyed with the Ukazi soup😋

I hope you try it out and enjoy too!
And I hope to read about the traditional food that is peculiar to your region as well

I invite @justin44 @munalice and @padosky to join in this amazing contest
