Church going over the entire weekend is a big part of Easter in Jamaica. It's a time of quiet reflection, especially for older folk.

We usually eat a lot of fish... no meat most of the weekend, but especially Holy Thursday and Good Friday. In addition to fish, we eat a LOT of bun and cheese.

In times past, many households baked their own buns, enough for the family and to give away to all friends, loved ones, business and other social acquaintances.

Now, some still bake but most just buy from a wide variety of bakeries. Most have their favorite bakery. Many stock up on both bun and cheese 4-6 weeks in advance if they are able, others buy last minute and run the risk of losing out on the best buns or can only get smaller sizes.

The fav size both for personal family use and for gifts is the largest of the boxed buns... it's at least 20 inches long and about 6 inches across.

Fish can be served in many ways. Steamed of course, but also baked, fried and escovitched. The last is very special. Lots of pepper, pimento and vinegar and it has to stay soaking in the juices of all of that for at least 10-12 hours. I just saw a couple videos on Youtube and will try to put up a post with the most authentic looking ones if you're interested, @alexvan.
