RED CABBAGE #1

Red Cabbage, also known as red kraut, blue kraut or purple cabbbage, is a purple-leaved varieties of Brassica Oleracea, and a member of Brassicaceae or Cruciferae family. The color of the leaves of this plant depends on the pH value of the soil. The leaves grow more reddish in acidic soils, more purple in neutral soils and greenish-yellow in alkaline soil.
Red Cabbage can be eaten raw. It is usually eaten raw in salads. It can be braised, sautÈed with other vegetables or steamed. Usually, red cabbage turns blue when cooked. If you want to retain its red color then you must add vinegar or acidic fruit. Aside from being delicious, it is also packed with nutrients and minerals.
