The almond and chocolate cake, without flour or sugar. Suitable for diabetics, celiacs and vegans because it has neither sugar, nor gluten, nor animal protein. It is also very tasty and has a high nutritional value since almonds have vegetable protein, vitamins and minerals.

Each serving of this almond and chocolate cake without flour or sugar contains:

INGREDIENTS

150gr of peanut butter
150gr of chocolate to melt without sugar
150gr of ground almonds (almond flour)
6 tablespoons of linens diluted in 12 tablespoons of water
20gr of stevia / sucralose to taste
10gr of (baking powder)
1 teaspoon vanilla (optional)
a pinch of salt

Preparation.

Step 1
In a bowl, beat the eggs with stevia (or the sweetener you want), vanilla, and a pinch of salt.

Step 2
In a saucepan over medium heat, melt the chocolate tablet to melt (chopped) with the butter, stirring so it does not stick. We reserve and let it be tempered so as not to boil the eggs when pouring the chocolate.

t is very easy to prepare, it has no mystery. The most complicated step, perhaps, is to cover it with the rolled almonds (and it's not that it's difficult, it's just that it's laborious), but you can skip it if you want. This almond cake and chocolate if flour is very good as it comes out of the oven, the coverage is optional.

In spite of controlling the hydrates when eliminating the flour, I recommend consuming it at noon after a light meal. In this way we will have all day to process the hydrates of chocolate and avoid glucose peaks. Oh, and of course, if you want the whole cake to be gluten-free, chocolate should also be suitable for celiacs (gluten-free).

Step 3
When it is at room temperature, we add the chocolate with butter to the bowl of the eggs, and beat.

Step 4
We add the almond flour and the yeast, and we integrate them well.

Step 5
We grease a removable mold, round (22cm), with a little butter, and pour the dough.

Step 6
With the previously preheated oven, bake at 180º for about 25-30min, until a stick sticks it out clean (the time depends on the oven). Do not pass for a while, it would be dry, better to get it out sooner.

Step 7
Once we remove the cake from the oven, we will let it cool and we will remove the mold carefully.

Step 8
For the coverage (optional), we will use homemade nutella without sugar or gluten, and we will spread it over and on the sides of the whole cake.

Step 9
We cover with rolled almonds that we will have lightly toasted in the pan with a spoonful of sucralose, so that they crack (very good).
