Greetings healthy food community, today I am going to present a delicious healthy dessert, as it is: Zucchini Brownies. My entry into this seventh week of the challenge organized by @healthsquared and @sweetsssj.


This is a very healthy dessert, versatile, economical, nutritious, with few ingredients and lots of fiber. It is suitable for celiac, diabetic, intolerant, allergic and special diets. A creative option to include vegetables, legumes in children's diet and lunch boxes.


Benefits and Properties of Zucchini

The zucchini contains:

  • Vitamins: B1, B2, B6, C, folates or folic acid.
  • Minerals: Potassium, magnesium, sodium, iodine, iron, calcium and phosphorus.
  • Others: a lot of water, carbohydrates, proteins and very few fats.

Recommended for:

  • Immune system (folates).
  • Collagen, teeth, bones, red blood cells, immune system (magnesium).
  • Muscles and nervous system (potassium)
  • Laxative (potassium).

INGREDIENTS (6-8 servings):


  • 1 cup chickpea flour (You can also use banana flour)
  • Sweetener to taste
  • 1/4 cup of coconut oil.
  • 4 tablespoons of cocoa powder
  • 1 teaspoon vanilla without gluten
  • 1 large zucchini (350 g)
  • Chocolate pieces or nuts (optional)



PREPARATION:



1.- Preheat the oven to 180 ° C.

2.- Grate the zucchini with skin.




3.- Add the cocoa powder, the sweetener, the oil and the flour, mix well with the vanilla, the chocolate in pieces and the nuts until integrating.




4.- Grease the mold and pour the mixture.




5.- Bake 25 to 30 min at 180 ° C.




6.- Ready, let cool and cut your brownies.



You can bathe with chocolate 🍫 melted.
