Eating one green item per day

How often do you eat something that is green? A few times a week? What was the last green item that you ate?

I've been on a health kick over the last few years as I am not 'young' anymore. (I think 40 is still young) I've been cycling, jogging and started swimming on the exercise front and eating healthier on the nutrition front.

One thing that I thought of for eating healthier was to eat at least one item that is green per day. (More is OK!) We all know that there are essential vitamins and minerals in fresh green vegetables, so eating at least one on a daily basis made sense. (Because there were consecutive days that I did not eat anything green in the past)

A salad of lettuce, sliced carrots, mushrooms and cucumbers. Sliced almonds adds a bit of crunch and dried cranberries adds a bit of sweetness. Just add your favorite dressing.

You can take a small salad to work. This had red onion slices instead of carrots.

The Costco in my area has a 1 lb container of organic mixed greens for $4 which is a great price considering organic produce from your typical supermarket.

I would highly recommend getting organic produce if possible. If you have a Trader Joes in your area, they usually have good prices on organic items.

You do not need to eat salad all of the time either. You can make side dishes of seasoned green beans, peas, zucchini, etc...

Start off eating one green item for a few days, then a week. It will soon become part of your lifestyle and you will be healthier because of it.

Working out and staying 'fit' is the other part of being healthy, but it is much harder to do as it is physical and takes time. A different topic for another day... Happy green eating!

Good reminder. Most days I have a green vegetable of some type at each meal. Sometimes only at 2 out of the 3 meals. Costco is a great green grocery item source for me as well. Favorites are:

  • Green beans
  • Broccoli
  • Peas
  • Brussel sprouts

I'd say you eat healthier than most people... I like all of those on the list, I have not tried cooking Brussel sprouts. I did have some a few months ago at a restaurant that were grilled and had a sweet sauce over them, they were pretty good.

For brussels sprouts we typically roast them tossed in bacon fat and drizzle a bit of honey on them. Good sprouts aren't too bitter but the honey can offset any excessive bitterness.
