Friday Focus: Overnight Oats

Following on from Tuesdays tip about oats and breakfast, I thought I’d share a yummy recipe for overnight oats - for those who don’t have time in the morning!

You will need a clean jam jar:
1/2 cup of steel cut oats
1/2 cup Almond or coconut milk
1 tbsp of chia seeds
1-2 tbsp of chopped nuts (or nut butter. Almond is best!)
1 tbsp coconut flakes
1 tbsp maple syrup (100% maple syrup or raw honey)
4-5 blueberries (or raspberries...you choose, but not too much fruit!)

In your jar, mix all ingredients apart from the fresh fruit. If using a nut butter, this can be difficult to mix, so sometimes I put the lid on the jar and shake it, or just drizzle the nut butter on top at the end!

Leave in the fridge overnight and in the morning, add your berries and tuck in! 😋

Some variations include adding spices like cinnamon on the top, cacao nibs; if you are already using a high quality vegan protein, a scoop of this. You can get very creative with the flavours! Experiment and let us know in the comments what your favourite flavour is! Bon appètit!
