The Weekly Steemit Health Challenge #9: Vegan Burger with Lentils and Eggplant

Greetings dear community, happy to participate again in week number 9 of the Weekly Steemit Health Challenge! Thanks to @healthsquared, and sponsored by @sweetsssj.

Today I bring you this recipe that apart from being economical is extremely nutritious and very easy to make, I think the art of cooking is in creating delicious dishes with whatever you have at hand, I think that with few ingredients one mind can let the creativity at its best.

This combination of lentils and aubergines with a touch of basil I particularly love, another option would be coriander this herb is my favorite.

You can accompany them with steamed potatoes, onions in caramelized rings, raw or cooked salads or accompany them with whatever you want. It is especially recommended for people who are overweight because it does not provide as many calories.

As a curious fact, the lemon juice that serves as dressing for the salad, favors the absorption of vegetable iron, in this case of the lentils that are one of the most representative sources of this essential micronutrient.

Now if you lend hands to lentils!

Ingredients:

130 grs Lentil puree
100 grs Eggplant puree
1 egg
3 Tablespoons ground flaxseed
3 Tablespoons grated cheese
Basil leaves
Salt
Pepper

Preparation:

The lentils are left to soak for approximately 2 hours and then put to cook in water.

Once the lentils are cooked, remove them from the water and do everything possible to remove all the liquid.

While cooking the lentils, thoroughly wash the aubergines and roast them in the oven at 200 degrees or in the microwave for approximately 5 minutes.

You can peel the aubergines or leave the skin.

Cut into small pieces and place in a colander and squeeze well trying to get as much liquid.

Chop a clove of garlic and fry it with a spoonful of olive oil. Add the aubergine and cook for about 5-7 minutes over medium-high heat. Remove from the heat and transfer the mixture to a food processor.

Add the mashed lentils, egg, basil, flaxseed, cheese, salt and pepper. Process to obtain a cream. If the mixture is very soft, you can add a few spoonfuls of oatmeal or almond flour.

Shape hamburgers. Cook them in a lightly greased non-stick.
