Greetings to this great community, my entrance for this week of the great healthy challenge is: Passion Fruit and Banana Muffins organized by @healthsquared. This is a rich and healthy dessert, easy to prepare.

Benefits of passion fruit

Passion fruit is a citrus, rich in vitamin C and antioxidants that protect the health of the cells, while offering a shield to prevent the entry of viruses and helps to combat them when they are already inside your body.

The so-called "passion fruit" has a high water and fibre content, which makes it a functional food to prevent constipation, reduce blood cholesterol levels and keep sugar at stable levels.

Vitamins A and C provide the passion with antioxidant properties and give it the ability to help in the prevention of some degenerative diseases and the cardiovascular system.

INGREDIENTS (For 10-12 Muffins):


  • Two cups oat flakes (instant or traditional).
  • Four eggs (four clear and two yolks).
  • One tablespoon of baking powder.
  • Half a cup of sweetener (the one you use).
  • A cup of passion fruit pulp.
  • Two medium bananas.

STEP by STEP:



Process oatmeal into flakes until oatmeal is obtained.




Then mix the oats with the sweetener and the baking powder.




Then add the passion fruit pulp to the mixture.




Separate egg yolks and add two whole eggs and two egg whites to mix until a homogeneous mixture is obtained.




Mash or purée the banana with the help of a fork and add to the mixture.




Add the mixture into the oven-fit molds and decorate the surface of the muffins with slices of the second banana. Lastly bake 30 to 40 minutes at 220 degrees C.



Ready to enjoy, ideal for children's snacks and why not the whole family.
