Prostate Care Diet for Today : Pea and Mint Soup [Post #6]

Hello Steemitsonians, today, I continue on this Prostate Care Diet for Today blog looking at food and diets that can significantly help improve, prostate health. Like I have always said, this is not for men only, it is also for women who want to do more to help their spouses have their prostate situation under control. I have been reading quite a bit on this, particularly the book "Healthy Eating: The Prostate Care Cookbook" and my findings will be posted on this blog.

The prostate is that part of every man that needs proper monitoring to prevent the development of prostate cancer. The lower the Prostate Specific Antigen (PSA) level in the blood, the better for the health of the prostate. Although there isn't a specific normal or abnormal level of PSA in the blood, but most doctors have in the past considered PSA levels of 4.0 ng/mL and lower as being normal. Proper care is needed to maintain these levels.

Diet for Today

Pea and Mint Soup

Ingredients for four people

  • 150 grams of diced potatoes
  • 175 grams of chopped onions
  • 1.2 litres of vegetable or chiken stock
  • 1 teaspoon of olive oil
  • 450 grams of defrosted petits pois
  • 1 bunch of chopped mint
  • 300 ml soya milk
  • salt and pepper
  • a little soya cream and a few mint leaves to garnish.

Preparation

Step 1

Put on the cooker and stir the onions and potatoes in the olive oil for 5 minutes until soft but not brown.

Step 2

Add the chicken or vegetable stock to the onions and potatoes and bring to the boil. Simmer for 20 minutes until the potatoes become soft.

Step 3

Add the peas, and bring back to the boil. Simmer for another 2 minutes.

Step 4

Add the mint and immediately blend into a puree with the blender until the soup is smooth.

Step 5

Add the soya milk and season with salt and pepper, then reheat gently before serving.

Step 6

Garnish with a swirl of soya cream and a few mint leaves.

You can serve with crusty bread if wanted.
