TIPS AND TRICKS FOR THE CHEF!
Today I am going to share with you a few little hints which can come in handy when storing, chopping, cooking and preparing your food. Anything to make your life and work in the kitchen a little faster and more efficient. Enjoy!
Herbs (preservation):
Preserve your herbs by cutting or chopping them into small pieces and filling the compartments of your ice cube tray. Add whatever oil you like to cook with or use on your salads i.e. olive oil, sunflower oil or coconut oil. Keep them in the freezer; you‘ll have herbs all year round!
Lemons
If you have an excess of lemons on your tree, there are good ways to preserve them for later use. Cut the lemons into thick slices, place them in a cookie/cupcake tray with water and then place them in the freezer. This makes nice large ice cubes.
- Freeze the whole lemon overnight. Once frozen, remove them and grate them using the cheese grater. Fill ice cube trays with the grated lemon and store them in the freezer. Now you can use them for cooking or salad dressings.
- Alternatively, you can squeeze the lemons and freeze only the juice in the same manner.
- In addition, remember that if you want to get the maximum amount of juice from a lemon, place it on the counter-top, then place your hand on top and roll it back and forth at the same time applying a little pressure. It will also make the juicing a little easier.
- If you require only a small amount of the juice don‘t cut the lemon in half. It will go dry and become unusable very quickly. Instead place it on the counter top, then place your hand on top and roll it back and forth at the same time applying a little pressure. This makes the lemon softer and easier to extract the juice. Now, using a toothpick, poke a small hole at one end and squeeze out only the required amount of juice. The whole lemon can now be stored in the fridge for later use.
