The Weekly Steemit Health Challenge #9: Vegetable Pie

Greetings Steemians! happy to be once again participating in this challenge of healthy recipes. This week I bring you the following entry: Vegetable Pie. This great challenge is organized by @healthsquared.

Benefits of consuming vegetables:

  • Vegetables provide vitamins and minerals.

  • Vegetables next to fruits are the food that gives the body more water.

  • They help the little ones at home in the growth and development of their organism.

  • They have a high fiber content.

  • They contain antioxidants, which protect us against certain cardiovascular diseases and related to the degeneration of the nervous system.

  • Its high potassium content helps us to eliminate excess fluids.

  • vegetables, along with fruits, are almost exclusive source of vitamin C.

  • Vegetables do not contain fats, this means that when consumed is less cholesterol and triglycerides in our blood, much more cardiovascular health.

-A large zucchini.

-Two carrots.

-Two potatoes.

-A branch of parsley or cilantro.

-A natural yogurt (250 grams).

-Four eggs.

-Light buttery cheese.

-Cherry tomatoes to decorate.



1- The eggs, yogurt and parsley or cilantro are added to the blender and mixed. Reserve the mix.





2- Remove the skin from the carrots and potatoes, then slice the carrots, zucchini and potatoes or cut them very thin.





3- In a container or refractory add layer with the vegetables and the mixture is added on each layer.

Also added a layer in the middle of cheese.





4- If you prefer, you can add dehydrated oregano to taste in one of the last layers of vegetables. Then in the last layer of vegetables add the mixture, the cheese, again mix on the cheese and finally the cherry tomatoes cut into slices to decorate.





5- It is finally taken to the oven for an hour at 200 degrees C. We put a lid on the refractory or with aluminum foil so that the vegetables soften much faster.





Ready to enjoy it, it is a very appetizing and healthy option.
