There isn't much that makes me happier than to harvest our own fresh veggies from our food forest and to cook and serve a nice absolutely delicious, fresh, and nutritious soup to my family and friends on this cold rainy day.

Today I harvested some Early Sprouting Broccoli florets, green onions, cabbage, and mustard greens. We chopped them up, added to a stew pot. Next, we added water, some minced fresh turmeric root from our summer harvest, fresh ginger root, sweet onions, and spices (curry powder, onion powder, garlic powder, white pepper, pink salt, and a little dashi paste). We let the vegetables cook for a few minutes, but not too long as you don't want them to get mushy and or loose nutritional value. Once they were slightly soft yet still bright green and crisp, we added some canned organic chickpeas, udon noodles and lots and lots of love. Let that cook for about 5 to 6 minutes then you are ready to serve. Top with some chives or fresh chopped spring green onions.

For an added layer of flavor, you could add some lemon balm in the broth while it cooks. I totally forgot to do this but in the past we have and it is so delicious in soups like this.

Kaliah and her friends are really enjoying a nice hot bowl of soup on this cold rainy day.

It's a very simple yet super delicious soup to make. The vegetables were cooked just enough to make them slightly soft yet still crisp and full of nutrients. The broth is very flavorful you can't help but to sip every last drop. On the next cool rainy day you have, try filling your pot with a delicious soup for your family to enjoy.
