[Grateful Vibes #66] I'm Grateful for My Wife's Cooking (Recipe Included)

Dinner is coming from my wife's imagination tonight.

My wife has this amazing ability. She can look at a bunch of ingredients and turn them into dinner. Tonight, she saw some frozen chicken, mushrooms, asparagus. Since she's nursing, she can't have any dairy, so she turned these ingredients into some sort of combination of chicken piccata and pasta primavera. I don't even know what these are, that's what she described this dinner as.

We enjoy watching the cooking show "Chopped", so this is sort of like a chopped challenge where the chef has to use a collection of eclectic mystery basket ingredients.

Meanwhile, my son is experiencing his 4th trimester.

To top is all off, she's cooking with Daniel nestled up to her, like he was back inside. He looks so peaceful, dispite all the noise and commotion of cooking and other girls entertaining themselves (loudly), he's chilling out being close to his mamma.

Dinner smells good tonight!

What good are pretty photos without a recipe?

Recipe:

1.5 pounds boneless chicken breast
Salt & Pepper
3 - 4 Tbl olive oil
8 oz button mushrooms, sliced
1 Tbl chopped garlic (2 large cloves)
1/2 cup dry wine
1/2 cup chicken broth
Chopped parsley (optional)

8 oz spaghetti, cooked and drained
TOSSED WITH
1/4 cup olive oil
1 Tbl dried basil (or any other savory herb)
1/4 grated parmesan cheese

Place the chicken breast between two pieces of plastic wrap and pound out until very thin (about 1/4"). Cut into smaller pieces if desired. Sprinkle each side of the pieces with salt and pepper and allow to stand while heating oil.

Heat oil on medium-high heat in a large skillet until smoking hot (you need a good sizzle on the oil to brown the chicken without getting it overdone). Place the chicken in the pan and cook 1-2 minutes per side (it's very easy to overcook the chicken when it's pounded this thin!). Remove to a plate and cover with foil to allow chicken to rest while preparing mushrooms.

Place the mushrooms in the same skillet as the chicken. Add garlic and saute until mushrooms begin to soften and garlic is fragrant, about 2 minutes. Deglaze the pan with the wine and broth and reduce heat, simmering until liquid is reduced, about 5 minutes. Add the chicken and any accumulated juices back to the pan and turn to coat pieces.

Place the pasta in a large flat bowl and arrange chicken on top. Pour mushrooms and sauce over the whole dish. Topping with chopped parsley really adds a lot to this meal, but we often don't have fresh parsley in winter.

My children find ways to entertain themselves.

A happy looking family right there!!! I’ve always thought I had the same knack throwing things together. I once took okra, squash, potatoes and peppers (all from the garden) and made a killer hash that the family seemed to like!

We really enjoy okra around here. Roasted with garlic and onions. Or in our chili. Yum! Wish we could grow it here, but it's too cold. @ironshield

That stuff grows real good down here. it will produce until it freezes...sometimes until dec or Jan!
