Gout Recipe: Baked Vegetable Omelet
This Baked Vegetable Omelet has less than 350 calories.
This is my variation of the Betty Crocker mainstay, and it makes a great addition to my gout recipe cookbook!
Ingredients
1 cup shredded pepper Jack cheese (4 ounces)
1 ½ cups chopped spinach
¹⁄³ cup finely chopped onion
2 medium tomatoes, coarsely chopped (about 1½ cups)
2 cups shredded Cheddar cheese (8 ounces)
1 cup milk
¼ cup all-purpose flour
¼ teaspoon salt
3 eggs
- Heat oven to 350º. Layer pepper cheese, spinach, onion, tomatoes, and Cheddar cheese in uncreased square baking dish, 8 x 8 x 2 inches. Beat milk, flour, salt and eggs until smooth; pour over cheese
- Bake uncovered 40-45 minutes or until egg mixture is set. let stand 10 minutes before cutting into serving pieces
GOUT TIP: Try using reduced-fat low-fat, or nonfat dairy products, such as milk, cheese, or yogurt.
