SEC-S20W4 | 2nd Time: Rice.
It is yet another gastronomy class and it is my pleasure to take part in this week homework. I so much enjoy the study because it is very plain and understandable as it has to do with the ingredients that are readily available in my location. It also contain the things I've already known so it makes the study very easy for me to understand.
Rice is one of the most common food in my country. I cook rice like every week in my home, My family members likes rice so with this I have some knowledge about rice especially the different types of it. This lesson has also exposed me to other types of rice that I never know and how to prepare rice as the main dish or side dish, I appreciate it.
So I proceed to do my homework
Yes at least I'm familiar with the three types of rice that is mentioned in this week class. For the long grains, I know the white rice, basmati rice and brown rice. I also know glutinous short grain rice although we have other type of short grains that is locally prepared in my country, abakiliki rice.
For this contest, I will prepare palm oil rice commonly known as MTN rice in my country. I used short grain rice for this this preparation.

Ingredients
- Rice
- Catfish
- Palm oil
- Crayfish
- Onion
- Fresh tomato
- Ugu leaf (green leaf)
- Ginger, garli and tumeric
- Pepper
- Seasoning cubesto taste
- Salt to taste
I added palm oil to a dry pot then allow the oil to heat for about 3 minutes
I added my already parboiled rice and fried it for 1 minute, I stir consistently.
At this stage I added salt and seasoning cubes to taste, crayfish, pepper, onion then I added a little water and cover the pot to simmer for 10 minutes.
I added fresh tomatoes and more onion and cover the post for 3 minutes and all the water was dry.
I finally added the green leaf and stir then cover the post for 1 minute and my local rice was ready.
Rice with vegetables and protein (catfish)
Mixed salad can be used, then the main dish is rice and a fresh pineapple smoothie as desert.
I made this choice because it helps this meal too be balanced with all the necessary nutrients that is needed to consume to given proportion.
It was really smooth for pasta, I have never made a pasta before. I only prepared ready made pasta but my experience of learning how to make a fresh pasta was really amazing. Although, I was a little bit scared if I will be able to eat it or how the outcome will be like but I was determined to carry out the practical and of course I was pleased by the results because it's turned out very well.

This week again I have learned about rice the different types of rice and how it is being served. I appreciate the fact that this class has built that knowledge or has expanded my knowledge in the field of knowing the different types of rice and their taste.
Initially when I started reading the course, I was nervous to see what this week holds but after reading the different types of rice and their flavours, I sat down to imagine the different types of rice I've eaten and how it tasted. It has never came to my mind to sit down and imagine the different flavours of rice and go by choice. But then this class has helped me to have that at the back of my mind anytime I'm buying rice again, I'll definitely go for the one that has a good flavour and a good taste.

Yes I like it so much, it is the only type of rice I eat without having heart burnt. So I enjoyed it so much.

The best was very delicious and the colour it has is derived from the palm oil I used with some spices like turmeric and ginger it helps to give it this yellowish colour.
