It is another amazing day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  

We made a delicious feast for our volunteers today, cooking over fire on our rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.

Today we made a Tex-Mex taco feast!!!

Tex-Mex is a Texan version of Mexican food that usually has some variation of meat or beans with cheese rolled in a tortilla. We made all the fixins for tacos today, and everyone here was at liberty to assemble their own feast to their exact tastes!

We started with 2 variations of pulled chicken, one spicy and one mild for the children. Both featured chicken, garlic, onions, chili powder, and cumin. For the spicy version, we added a sprinkling of our blazing hot dried peppers from a previous season's garden bounty!

We also made some delicious smokey veggies with green beans, yellow squash, and zucchini. These made fantastic veggie tacos or additions to the chicken!

We also had sautéed onions and peppers for jazzing up our Tex-Mex dishes. They add lots of yummy flavor as well as sulfur, potassium, vitamins A, C, E and the Bs, fiber, phosphorous, and copper for health boosting deliciousness! 

We served some tasty pico de gallo with red tomatoes, onions, lime juice, garlic, cilantro, and a bit of jalapeño. It's a chunkier version of salsa that makes a great condiment on tacos and similar dishes! 

The beauty of tacos is that everyone can layer as much or as little of any ingredient that they want! This lovely has spicy pulled chicken, yellow and zucchini squash, onions and peppers, pico, and grated pepper jack cheese on a whole wheat tortilla.

Of course we had a green garden salad on the side to get more vitamins and minerals and valuable phytonutrients! We served our taco and quesadilla with an extra dollop of pico de gallo and tangy yogurt for creamy dipping. Sour cream is a classic Tex-Mex condiment, but we substituted yogurt for it because we don't have any one hand right now. 

Everyone had fun feasting on tacos and various variations of them, and there was more than enough of everything for everyone to eat to their heart's content! Olé!
