The Year of the Chanterelle Mushroom! The Weather has been Perfect for the Biggest Harvest EVER!

Chanterelle Season Is Here!


We are so blessed to live where there are chanterelle mushrooms popping up EVERYWHERE!!! They are in our back yard all over! They are in our friends wood all over! And we are foraging and harvesting more than we ever dreamed!


The rain we have experienced here in Georgia has been really great for mushrooms! They are everywhere in this picture above if you look closely! look for the orange color in the understory. The chanterelles are all around!

This year we are finding more than we can eat so we are dehydrating and sharing with friends! We usually barely get enough from our backyard for one meal, not this year! After the harvest we got yesterday we shared a bunch and still had well over 5 pounds left for us!

We found a spot yesterday where they were as big as my hand! I have never seen one this big in person! Some of the biggest ones had to be left behind because they had gotten pretty buggy. We always leave behind a lot to propagate for future generations. That is very important when foraging.

It's our first summer in Georgia and loving the chanties so far!! Been finding some monster ones. I just picked a basketful yesterday. Had some with breakfast & planning on having them again with dinner tonight :)

This has been the best year so far!

Chanterelles are such great mushrooms. And good video advice for soaking the mushrooms to get any insects out. Happy foraging!

Don't soak too long or mushrooms will absorb water! Some people add salt to water to encourage bugs to come out but I don't becauase I pour my water back where mushrooms would grow to spread the spores!

Those are both good tips for soaking mushrooms!

Wild mushroom knowledge is lacking in my bushcraft 'arsenal', I really must delve into the topic more.

It's fun to see those big ones in the top photo! They really stand out. It's so great when a place gets an unusually large flush of mushrooms. Dehydrating them and freezing pre-cooked mushrooms are such effective ways to preserve a big harvest! I hope you find a lot more this summer! Vivre la Chanterelles! :D

(I don't know if that French is right, but you have so many chanterelles, I don't care, lol.)

LOL! It was really insane! We saw those from top of hill and ran down hill squealing like kids!

Now that's some true mushroom foragers! You know what's worth getting excited for! :D

It's going to be a bumper crop for sure. I've been out in the woods the past two weekend and the forest is just covered in small Chanterelles, no bigger than your pinky. I am thinking two more weeks and they will be big enough to be worth picking en masse.

Oh man, that land looks gorgeous. Currently in CDMX and haven't gotten to experience nature in a few weeks. How often do you forge mushroom (in a week?)

When it keeps raining like this, every three days is good to check an active spot. Usually three days after it rains life is really bursting.

Like olive oil.
Do you know how it is this procces.

I am going to try a Mediterranean style pickled mushroom in oil on some! I can't wait!
