Ценная морковь
Пищевую ценность этого овоща обуславливают следующие признаки: присутствие в моркови каротина – вещества, которое в организме преобразуется в витамин А, наличие витаминов группы В, большое количество сахаров. Цвет корнеплода является основным показателем кулинарного качества.
Ярко-оранжевая морковь, обладает наилучшими качествами. Чем интенсивнее цвет овоща, тем больше в нем каротина. Также ярко-оранжевая морковь более насыщена сахарами. Мякоть насыщенной по цвету моркови мягче. Сердцевина моркови содержит много клетчатки. У хороших сортов моркови почти не видна, она не отличается от мякоти которая окружает её.
В результате свойства каротина окрашивать жир, морковь используется кулинарами для окрашивания супов. Очищенная морковь почти не вступает в реакцию с воздухом, не меняя при этом свой цвет. После очистки её можно хранить, в посуде без воды, значительное время.
