@vegansofsteemit Monday entry here. Out foredge and hunting ramps. I discovered the every year batches on the property. Then took last of last years potatoes and baked them up for soup.
Fruitsandveggiesmonday Potatoe leek soup
Foredge ramps
Ingredient
- Red and Yellow Potato’s
- Ramps(wild leeks)
- Coconut oil
- coconut milk
- chives
- old bread
Very simple bake potatoes till soft light coating in oil. Add ramps for 15 at end. Take whole mixture and purée with coconut milk. I added seasoned salt and pepper. Summer together for additional 30 to combine flavors.
took last of ramps and pickled them for later, probably most important part of seasonal goods. Saving a bit for later.

Yum! That soup sounds delicious, but I'm even more jealous of your ramps! I've heard about them for a few years now, but don't know if I've ever seen them around here. I be they're great pickled. :)
The young greens are dinamite. The bulbs work as both onion and garlic, and are great 3 months later as an accompaniment
