Fruits and Veggies Monday
Greetings to everyone:
One of my family's favourite meal is a humble dish of lentils.It has an earthy and savory taste and best to eat it with rice. It also provides high amount of protein, a source of fiber and folate. There are lots of types of lentils, There are green (mung beans), red, brown, black, yellow, white (urad dal), and puy (french green). They are mostly similar in taste and nutrients are roughly all the same as well.
Below is my easy recipe for lentils :
Ingredients
- yellow split lentils (a cup)
- turmeric (half a teaspoon)
- ground pepper ( 1/8 teaspoon)
- a dash of salt
- eggplant
- moringa
- tomato
- cilantro/ coriander leaves
Studies shown that, adding a ground black pepper to turmeric will increase the absorption amount in our body.
Preparations:
Wash and soaked the lentils for at least 30 min to soften. The longer its soaked, the the quicker it will cook.
In a pot, combine the lentils, salt, ground pepper and turmeric.
let it boil and simmer until it gets thick in consistency.
Add tomato and eggplant and cook for few minutes.
Add the Moringa leaves and the coriander/ cilantro. cook for a minute.
Serve warm and Enjoy!
Lentils are nourishing and one of the essential source of nutrients needed for our body. They are inexpensive and simple recipe to cook.
In one of my DIY arts, I made use of lentils, grains and beans to exercise sensory and motor skills for my son (Robbie). It allows him to feel the texture and shapes of the seeds.
He was so curious to feel them. It was colourful with all the different lentils and grains.

Thank you for the recipe. I love all colors of lentils but I use the red ones the most. They are so quick and healthy. I use them in soups, warm salads, buddha bowls, even bread spreads. They are very versatile. But as I said, I love all of them :)
