Sugar and spice and all things nice!

All my friends know by now that I have a super sweet tooth, so when I saw the bright orange inside this little grey pumpkin, I knew just what I'll be making for all our Fruits and Veggies friends - Grandma's Pumpkin Fritters rolled in a Cinnamon Sugar mix, was a real trip down memory lane as I have not made these for a long time. Hubby is a type 1 diabetic so cannot tempt him too much - he's also on Keto at present so this is one of the veggies that's a no-no for him!

As we're going into winter here, there's a huge variety of winter squashes and pumpkins around; I used this grey Pumpkin for my Pumpkin Fritters.

Our Pumpkin fritters are often served with the main course especially in the Afrikaans speaking home being a typical South African veggie dish. In the Afrikaans culture, sugar is added to many veggies - glazed Carrots, Gem Squashes are sweetened, baby peas & mint will also get some sugar added as do Pumpkin and Sweet Potatoes as well.
I grew up in an Afrikaans home but my mom was not one for all the sugar laden veggies, but pumpkin fritters were the exception as this was my Grannie's favourite.

So without further ado, I'm late to the party already, here is the how-to:

INGREDIENTS

  • 2 cups cooked mashed Pumpkin
  • 1 Flax Seed Egg - 1 tbs Flax Seeds + 2 1/2 tbs Water
  • 125 ml Stoneground Cake Wheat Flour
  • 2 tsp Baking Powder
  • Salt
  • Oil for frying
  • Sugar & Cinnamon mix

Mix Pumpkin, Flax Egg, Flour, Baking Powder and Salt together.
Place spoonsful in shallow hot Oil & fry till golden brown on both sides, careful when turning.
Drain excess oil on a paper towel.

Roll in Cinnamon Sugar mix and serve.

I do hope you try making it some time, we normally use regular eggs but of course if you're vegan that's a no-no ;)
If you do make this, make sure the pumpkin is well drained, and also when frying them, don't turn it too soon as it's quite delicate.

Oh wow! I had no idea squash was so popular in Africa. How interesting! And also how delicious this fritters must be. I actually tried the same squash for the first time last year, so I know it's very tasty. I have a recipe on my blog; it was oven roasted and tossed with arugula. Nevertheless, I must try these yummy fritters as well. Wonderful job Dear Lizelle, beautiful photography as well 😍

They look amazing, over here the only thing they do with pumpkins is carving them, so I can only get pumpkin for Halloween, quite wierd.

Gosh they're missing out on so many good dishes, baked pumpkin, baby veggies (I still make that for us - a mix of potatoes, pumpkin and any green veg all mashed up, really delicious! Thanks for your feedback!

Oh my goodness those would totally satisfy my sweet tooth! Pumpkin is really so delicious in savory and sweet applications. At least you are getting plenty of nutrients while you get your sweet fix in this one! Love the family memories to go with the recipe, as well! :)

I have never had pumpkin Fritters but they sound and look so good
