Fruits and Veggie Monday | Chocolate Drizzled Alligator Pear Divine

It’s Monday, my fellow fruits and veggie lovelies, and time for @lenasveganliving 35th week of Fruits and Veggies Monday!

I would like to give a huge thank you to @lenasveganliving for hosting this contest as well as to our sponsors @progressivechef and @englishtchrivy. For those of us who love to create, this is such a beautiful venue to share, give and receive healthy food recipes, advice and community love!

Back at home now after hosting my daughter’s baby shower. Creating delicious food and desserts with her for her shower was indeed a blessing. It was fun to share that time with her, seeing the little nest she has created for her little bundle of joy! Just a few weeks left before he makes his grand entrance. I’ll be excited to share with you when he arrives!

Today we are creating another special dessert! In fact a healthy dessert! I think you will enjoy it.

But wait! You may ask, What are Alligator Pears?

Alligator pears, first named Ahuacate by the Aztecs, were brought to the United States around 1915. Spanish farmers felt the name Ahuacate was too difficult for Americans to pronounce and felt Alligator Pear was a very unappetizing name. The Avocado

Without further delay, let’s create,

Chocolate Drizzled Alligator Pear Divine!

Ingredients

Base Layer
1 cup raw almonds
1 cup Medjool dates (pitted)
½ teaspoon sea salt

Soak the almonds in filtered water overnight. Drain. Preheat oven to 325, place drained almonds on parchment lined cookie sheet and toast for 15 minutes.

Place almonds in food processor and process until chopped to fine consistency

Now add those dates! Pulse until well combined.

Press mixture into 9x9 baking dish lined with plastic. (This helps with easy removal later!) Set aside.

Now for the next layer! The Alligator Pear filling!

Ingredients

  • 2 ripe avocados
  • ½ cup coconut butter
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla
  • 1/8 teaspoon sea salt

Place all ingredients in food processor. Blend until very smooth.

Pour over almond/date base. Place in freezer for 15 minutes.

Now the topping! Yes, Chocolate!!

Ingredient

  • 3/4 cup chocolate chips ( I used soy and dairy free chocolate chips
    Melt chocolate chips using either double boiler or in microwave. Spread evenly over Alligator Pear filling.

Now back to the freezer! You may want to take it out after about 15 minutes to cut. This will make removal easier later!

This was such a great week, nice to be back in my kitchen. I really enjoyed incorporating coconut butter with the avocados. For those of you who buy your coconut butter stay tuned, I’ll be sharing how to make your own. It’s quite pricy as you know.
