Meat and flour at Chisza / Mięso i mąka w Chiszy

Browsing the Internet on Friday I saw an advertisement of a newly opened chinkali and shashlik restaurant "Chisza". As a fan of Georgian cuisine I couldn't miss such an opportunity. Together with J. we decided to take advantage of the warm Sunday afternoon and visit the restaurant.

Przeglądając internet w piątek zobaczyłem reklamę nowo otwartej chinkalni i szaszłykarni Chisza. Jako gruzjofil nie mogłem przepuścić takiej okazji. Wraz z J. postanowiliśmy skorzystać z ciepłego niedzielnego popołudnia i wybrać się do restauracji.

The opening of "Chisza" took place on Friday evening, so there was still a hectic atmosphere in the air - not everything was determined yet, not everything worked as it should, but everyone tried to do their best. A moment after we found a place in the restaurant garden, an elderly man, looking like an owner, approached our table and gave us additional cushions to sit on.

Otwarcie Chiszy odbyło się w piątek wieczorem, więc w powietrzu wciąż unosiła się gorączkowa atmosfera nowo powstałego biznesu - jeszcze nie wszystko było ustalone, nie wszystko działało tak jak trzeba, ale wszyscy starali się wypaść jak najlepiej. Chwilę po tym jak znaleźliśmy sobie miejsce w restauracyjnym ogródku do naszego stolika podszedł starszy, wyglądający na właściciela, pan i podał nam dodatkowe poduchy do siedzenia.

"Chisza" stands out among Lublin's restaurants serving Caucasian cuisine with its décor. The interior is decorated in a simple way. Cooks prepare dishes behind the glass, visible to the guests of the restaurant. The only traditional element among the light grey benches and tables are colourful cushions in Caucasian pattern. The property itself is small and most of the seats are in an open patio. All staff - from the owner to chefs and waiters - are of Caucasian origin. Perhaps it is a family business.

Chisza wyróżnia się spośród lubelskich lokali podających kaukaską kuchnię swoim wystrojem. Wnętrze jest prosto urządzone. Kucharze przygotowują potrawy za szybą, widoczni dla gości restauracji. Jedynym tradycyjnym elementem wśród jasnoszarych ławek i stolików są kolorowe poduchy w kaukaskie wzory. Sam lokal jest niewielki i większość miejsc siedzących znajduje się na otwartym patio. Cały personel - od właściciela po kucharzy i kelnerów - jest pochodzenia kaukaskiego. Być może to rodzinny biznes.

The menu is quite simple, but varied enough. Four types of shashliks, chinkali in two versions, three types of salads and several other pastries. Anyway, a large menu in a small restaurant usually means poor cuisine. You cannot be a specialist in everything.
I ordered coffee and a serving of chinkali with meat and cilantro, J. cheburek, and also typical for Georgian cuisine, carrots with oil and spices.

Menu jest dość proste, ale wystarczająco różnorodne. Cztery rodzaje szaszłyków, chinkali w dwóch wersjach, trzy rodzaje sałatek i kilka innych wypieków. Słusznie zresztą - obszerne menu w niewielkiej restauracji najczęściej oznacza kiepską kuchnię. Nie można być specem od wszystkiego.
Zamówiłem kawę i porcję chinkali z mięsem i kolendrą, J. czeburek, a do tego typową dla gruzińskiej kuchni marchew w oleju z przyprawami.

The first to arrive at the table were chinkali, large dough-sacks filled with meat and broth. You have to be careful with these Georgian dumplings - they are addictive like an Afghan heroin! Eating chinkali is an art in itself - holding it by a "petiole", you have to bite a small hole in the pouch and suck the broth out through it. Then, still holding the petiole, eat the rest of the dough and stuffing and leave the "stem" on the plate. Repeat until you reach nirvana.
The chinkali I got were quite clumsy. The meat was perfectly seasoned, unfortunately a little bit too raw. First minus for "Chisza". I hope that this is just a one-off slip.

Jako pierwsze do stołu dotarły chinkali, spore sakiewki wypełnione mięsem i bulionem. Z tymi gruzińskimi pierożkami należy uważać - uzależniają jak afgańska heroina! Jedzenie chinkali to sztuka sama w sobie - chwytając za "ogonek" należy wygryźć w sakiewce niewielką dziurkę i wyssać przez nią bulion. Następnie nadal trzymając za ogonek, zjeść resztę ciasta i farszu, a sam ogonek zostawić na talerzu. Powtarzać do osiągnięcia błogostanu.
Chinkali które dostałem były dość nieforemne. Mięso było wyśmienicie doprawione, niestety trochę zbyt surowe. Pierwszy minus dla Chiszy. Mam nadzieję, że to tylko jednorazowe potknięcie.

We had to wait a while for the follow-up. People who came after us have already got a beautiful, steaming chaczapuri and started to eat. While waiting for food, we looked around. Wild wine is climbing the grey wooden frames. The sun was shining through the wooden bars, casting shadows on the tables. No element overshadowed beautiful cushions with traditional patterns. Chisza is surely a pleasant place at any time of the day. J. paid particular attention to wild wine and hanging ropes of lights, ready to be turned on at dusk.

Na dalszy ciąg przyszło nam trochę poczekać. Ludzie, którzy przyszli po nas dostali już piękne, parujące chaczapuri i zabrali się za konsumpcję. W oczekiwaniu na jedzenie rozglądaliśmy się po patio. Po szarych, drewnianych stelażach pnie się dzikie wino. Słońce przeświecało przez drewniane kraty rzucając cienie na stoliki. Żaden element nie przyćmiewał pięknych poduszek w tradycyjne wzory. Chisza jest zapewne przyjemnym miejscem o każdej porze dnia. J. zwróciła uwagę zwłaszcza na dzikie wino i wiszące sznury lampek, gotowe do włączenia gdy zapadnie wzrok.

Finally, we got our cheburek and a large plate of carrot with oil to the table. Cheburek is a dumpling stuffed with minced meat and fried in oil. Fortunately, it was done enough and quite tasty, although I could point to a small amount of meat inside. Carrot with oil did not fail as usual.

W końcu dostaliśmy do stołu czebureka i duży talerz marchewki w oleju. Czeburek to pieróg nadziewany mielonym mięsem i smażony w oleju. Ten na szczęście był dosmażony i całkiem smaczny, choć można by się przyczepić do małej ilości mięsa w środku. Marchew w oleju jak zwykle nie zawiodła.

Aroma of meat roasted over hot coal was irritating our nostrils, so we ordered a little shashlik. After all, we were satisfied and happy. Of all restaurants in Lublin that serve Caucasian cuisine, "Chisza" has by far the greatest potential. Nice interior, good food and low prices. Keep it up!

Nasze nozdrza drażnił zapach mięsa pieczonego nad rozżarzonym węglem, więc zamówiliśmy na dokładkę małego szaszłyka. Po tym wszystkim byliśmy najedzeni i zadowoleni. Spośród wszystkich restauracji w Lublinie, które serwują kuchnię kaukaską, Chisza ma zdecydowanie największy potencjał. Ładne wnętrze, dobre jedzenie i niskie ceny. Oby tak dalej!
