Vintage baking with great Grandma Lily part two - Crunchy Nutty Biscuits
So my tiny 86 year old Mom Lily is a Grandma and Great Grandma already, however not courtesy of me yet!!!
Psst...did my sons hear that?...sigh...back to Mom Lily who had a busy week baking last week, this time making the most perfect biscuit in my mind, a crunchy nutty biscuit packed with nourishing ingredients.
I will provide the recipe at the end of this post.
Butter, eggs & sugar all go into the mixing bowl, mix until creamy.
Add Peanut Butter, Baking Soda, Milk & Vanilla Esssence and blend till cremy.
Dry ingredients are mixed separately, then added to creamed mixture.
Mix till well blended.
Form round balls and place well apart on a buttered baking pan, flatten biscuits with a fork.
Biscuits are baked at 170 C in a fan oven (or 180 C in a regular oven) until golden brown.
Carefully remove from pan onto a wire rack to cool down.
Delicious aromas drifting throughout the house, our Lily's Cottage guests just walked past ooh-ing and ahh-ing, will send a bottle down to them :)
RECIPE
Cream together:
250 gram Butter, at room temperature
400g (500ml) Sugar
Add & mix: 2 Eggs
135g bottle (125ml)Peanut Butter
Dissolve 10ml Baking Soda in 20ml Milk
Add: 5ml Vanilla Essence
Add the above to creamed mixture
Mix: 250g (500ml) Cake Wheat Flour
150g (500ml) Dessicated Coconut
75g (500ml) Cornflakes
200g (500ml) Rolled Oats
Add to creamed mixture and mix well.
Form small balls, place well apart on buttered baking pan, flatten with a fork.
Bake at 170 C in fan oven or 180 C in regular oven for about 10 - 15 min or till golden brown.
Leave to cool on wire rack and store in airtight glass bottles.
Makes approx 9 dozen biscuits (depending on size of balls).
A fun addition, Great Grandma/ Grandma/ Mom Lily in another role with the Bronze Bream she caught on the Kwazulu Natal South Coast, South Africa at the age of 72 . Mom tells me this was the last fish she caught!
The menfolk took their angling quite seriously, studied bait, the phases of the moon, the seatides; very scientific in their approach, but Mom would just go and throw her rod casually and often come back with the best catch :)

Exactly what I'm trying to do with these & especially for you & the other grandchildren. Imagine Soren can one day read about great granny Lily's baking! Ouma wore a dress one day when you were a tiny tot & apparently looked at her in wonder & said 'Ouma you've got legs!' & she still has, very shapely ones at that :):)
