PASTA, PASTA, PASTA!!!! Simple tip to PIMP UP your favourite pasta!!!

Making my own pasta at home, you ask? From scratch?No, no, it's too complicated... WRONG! Making pasta at home is as simple as 1, 2, 3! Trust me! All you need is type 00 flour (makes for the best dough) and free range eggs. Two ingredients people!

Ok, lets take it step by step...

The PERFECT RATIO: 1 large egg per 100 g of flour = serves 1 person! Thats it!!!

The METHOD:

~You can do it oldschool : 

Make a pile of flour on your worktop, create a well in the middle (a vulcano shape, hehe) and add egg/s into the well. Slowly incorporate flour into the egg mixture. It will be crumbly at first. When it sticks together into a ball, start using some ELBOW GREASE! Kneed the dough untill shiny and elastic. Wrap in cling film and leave to rest for 30 min (very important)!

 ~You can use a food processor (comes in handy if making a bigger batch):

Just bang the two ingredients into a food processor with a normal blade attachement, wizz and wait for the MAGIC! A ball of dough will form, take it out and kneed for a few minutes. Wrap and let it rest!

When rolling the pasta dough into sheets, you can do it in smaller batches with a rolling pin or use a pasta machine (super cheap and very useful). Go from the thickest setting to the lowest one. Cut your pasta into any shape you like!

THE POSSIBILITIES ARE ENDLESS!

The only thing to remember is not to add too much flour when rolling. DUST LIGHTLY!

AND THAT's IT! YOUR OWN HOME MADE PASTA!

And now, the tip to take your pasta to the NEXT LEVEL!

It's so simple it makes me smile...When your sheets of pasta are rolled out, just add leaves of your favourite herbs between two sheets! Roll the two sheets together to make them stick. Cut your pasta into any shape you like! Now, how PRETTY is THAT???!!!! Adds wonderful flavour as well!

Of course, drying fresh pasta next to your kitchen window, can lead to some funny neighbourly misunderstandings....

One day my neighbour Mrs. Ani, not minding her own business like usual, saw ribbons of pasta hanging on my kitchen window. She called out to me : »Lučka, do you realize your kitchen window curtains are ripped!?! It looks horrible (keeping up appearances in the neighbourhood is, of course, paramount!). You should change those immediately!!! -she's 80 years old, god bless, her eyes are not that sharp anymore-

I had to bite my tongue not to laugh! I just calmly replied : » No worries Ani, we'll eat those curtains for lunch anyway!«

She's been looking at me strangely ever since....:-):-):-)

Thank you for the simple, but versatile recipe! That sounds way easier than i would thought it would be. I like the ratios too - very easy to remember. I've got the next couple of cookouts planned out, but I'll definitely give this one a shot as soon as i get a chance!
