Foodboasting Contest #9 - colorful, tasty "Curcubita pepo" salad

I love summer time - for me it means delicious foods and fruits and being outdoors. In my quest to be creative with food while eating more greens - I decided to make a raw courgette or zucchini (Latin: curcubita pepo) salad. However this post is about this salad! Here it is..........................

The salad was full of mediterranean flavours and colours.

First I shredded the courgette and added lemon juice, olive oil, salt and some italian herbs.
I left this combination to marinate while I :
-diced fresh tomatoes,
--picked fresh basil and parsley,
---sliced up red peppers,
----drained red and black olives and
-----removed some sun dried tomatoes from its oil.
I tossed all these ingredients with the marinating courgette and served it on a large, crisp iceberg lettuce leaf. Voila!!!

This salad was so tasty and easy to make. Here is a closer look.

I was afraid all these flavours would be overwhelmed by the added parsley but I did not over do it and it was perfect. The salad was light but filling with the sun dried tomatoes and olives. I can imagine that some toasted pine nuts or some feta or goat cheese would compliment this salad. However, we enjoy by itself. Please try it and let me know what you think.
