How to cook arepas cabimeras
Hello stemians. In this post I'm going to talk you about one of the typical dishes of my hometown Cabimas, Venezuela. It isn't ligth food, I refer to arepas cabimeras (cabimans arepas in english?). In other cities of Venezuela are not so well known and those that I have seen in other regions, they sell them with the name of Zulian arepas. I even got to see a food stand of these arepas with that name in Panama.
Last Friday, a friend from another city came to visit me and I invited her to eat these arepas maked by Mimo, who since almost 40 years has been selling it in a old food stand, near from my home. Here's Mimo.
Until recently, Mimo cooked a very peculiar arepa in which almost all the ingredients were fried, except the egg, the plate and the fork. It consisted of a fried arepa, fried cheese, fried ham, boiled egg and lots of it, but lots of mayonnaise sauce and ketchup.
Mimo is an enterprising man and an example of the optimism and resilience. He has refused to close his food stand and He has not left the country like many Venezuelans.
When we asked the arepas, he clarified that they no longer made them as before, because by the current situation of Venezuela, the ingredients are very expensive and scarce. And he explained his new version more "healthy and light." I type it in quotation marks because they are not yet so light, lol. This is how he make it.
First, he fry a pre-roasted arepa in a budare (an iron plate), which is submerged in a mixture of cold water and wheat flour in equal parts with a pinch of salt. In other authors' post explains how to prepare arepas, but just follow the instructions of the corn flour package. After frying them, when they are very golden and crusty, place in a dish and cut into squares, two horizontal cuts and two vertical cuts on the arepa. Next, spread a layer of mayonnaise and ketchup.
Then a sliced boiled egg, and carrot and cabbage salad are placed on top.
Add a bit of shredded beef stew.
And finally, he puts grated cheese (here matera cheese is used, you could use parmesano, pecorino, grouyer or another cheese). And covered with more mayonnaise and ketchup. And ready to eat. It is not suitable for people with low fat diet, it is as a triglyceride pump lol.
