Crepes with salmon, lentil and vegetables ✨

             What comes to your mind when you hear the word "crepes". For me crepes are always in the sweet company of fruits, confiture or chocolate. They are usually served as dessert not the main course. But today I decided to do something different. Fusion cooking is very close to my heart as I love mixing different cuisines, flavors and forms of preparing food. My today crepes will not be a sweet dessert. They are served with salmon, lentil and some vegetables and allude to traditional Vietnamese dish - bánh xèo. As opposed to bánh xèo, which is made from rice flour, my crepes are made from all purpose flour.

            At first when I came up with the idea of preparing crepes I wanted to make them yellow by adding turmeric to the crepe batter. Well... it wasn't a good idea. It tended to scorch too much and I had to throw it away :/ This time my wife helped me and prepared the traditional crepe batter without any crazy additions ;) So once I got my crepe batter ready I could start to make my idea of crepes come true and the final result was amazing. But if you have some extra minutes to spend in the kitchen, don't skip this point. This sauce is a perfect match to those crepes. Drizzle the crepe bite with the sauce and you will see how tasty this combination is. 

Ingredients (5 portions) :

  • 30 dag salmon
  • 15 dag lentil
  • 1 green pepper
  • 2 chilli peppers
  • 1 green onion
  • 1 onion
  • 1 small carrot
  • 1 garlic clove
  • additionally iceberg lettuce for topping 
  • 2 tablespoons butter
  • 100 ml milk
  • 1 teaspoon salt
  • black pepper

Crepes:

  • 1 glass flour
  • 1 egg
  • 1,5 glass milk
  • 1 tablespoon oil
  • pinch of salt
  • water (add to get the proper consistence)

Method:

  1. Cut the salmon and season with 1 tablespoon of salt and chopped garlic. Pour with milk and leave in a fridge for about 1h.
  2. In a meantime, cut pepper, carrot, onion, green onion and chilli into the strips. Heat the pan and spread 1 tablespoon of butter. Fry the vegetables.
  3. Cook the lentil
  4. Dry the salmon and fry with 1 tablespoon of butter
  5. Prepare the crepe batter
  6. Heat the pan, add some salmon and pour with crepe batter. 

         7.  Add cooked lentil and put the vegetables on one half of crepe. Cover with the other half and wait until the crepe is ready.

This is an iceberg lettuce. It is crispy so it goes well with this recipe. If you can't find this type of lettuce you can replace it with other eg. chicory 😊

I stayed for the sause! haha... Nice recipe, I will try it soon! I will change the salmon with other fish that's local for me, any advice on getting the crepe dough right?
