This dish seems to be part of a family of Chinese jelly snacks:

(1) What Taiwanese people call 燒仙草 shāoxiāncǎo / shaushiantsao “grass jelly” (涼粉 loeng4 fan2 in Cantonese), where the word 燒 shāo / shau means “hot” in Taiwanese:

I wonder what plant this particular dish is made of.

Not exactly. They can be considered as the same kind of desserts. But the former is mainly made of mesons. The latter bingfen(冰粉) is made of Nicandra physalodes(假酸浆). And it's transparent and costs cheaper. To make it, you need to put 1500 ml water into this material and mix while boiling. After cooling down, you'd better store it in the fridge for 3 hours. Then, take out and add some brown sugar. Almost every family can make it in Sichuan. 😊
