Sun Dried Breakfast
Every morning when you wake up you always look forward to your breakfast to start up your day. Here in our country one of the most popular breakfast is dried fish. Though some may find the the smell of be foul while cooking here it is an inviting scent for breakfast. This is the perfect combination for this breakfast garlic rice, danggit, tuyo and salted duck egg with tomatoes.
This is what we call Danggit which is the process of preserving or drying the fish. There is a misconception about the term. Some refer to it as the actual fish but in fact it is the process. This small butterflied fish which is a top seller here in our country is a rabbit fish which no one calls that here. They just ask for Danggit and they give you this small fish. There are also other varieties of Danggit from Squid, Belt fish and dried Anchovy. There is a large market here in our country and even exports the product to other countries.
This is the Tuyo which is dried sardines and has the most smell while cooking. I would not recommend to have it cooked in a enclosed room. Even with the smell it remains a favorite of Filipinos. It was know as food for the poor before due to it's low price but is enjoyed by everyone from all walks of life. The fish has a strong salty taste and best neutralized by dipping into vinegar with a little chili or garlic to add a kick.
Let's not forget about the salted duck eggs. The eggs immersed in a solution made my mixing mud, water and salt. It is then left for 14 day and then heated for around five hours. These eggs are there colored red when sold to the market. For me the best ones which are oily when opened I find it has a better taste.
This is the complete meal which I actually had for breakfast this morning. Also this meal is best eaten with your hands washing first is a must of course. Some may not find it very appealing but it is part of our culture which everybody here loves. It's what culture is about different taste and different practices but we are all the same Steemians by heart. Bet you did not expect that lol. Cheers!
